Just made this and it was delicious! I was a little worried as I was putting it all together about how everything would taste together, but it worked! Would love for there to be a time estimate for #3. I had no concept of how long it would take for the sweet potatoes to soften.
The sauce for the top was a little difficult – it was hard not to burn it and I’m not sure how much it added to the dish since I mixed it all together before eating. But this will be great for my lunches! I loved the apple slicer hack. It didn’t work too well on the sweet potatoes, but was fun on the eggplant slices that were small enough. Also, I had to use an 8×11 instead of an 8×8.
