I don't know what it is about getting older and not sleeping. It truly makes me crazy. No, seriously I feel like a hungover zombie without the whole party all night like a rockstar. Three, four, sometimes five nights in a row with light, I toss and turn sleep is enough to make you lose your mind. It doesn't happen every week, but there are weeks when I really struggle to sleep.
Last week I was a mess. I called the guy in the middle of the night complaining. He told me to come over, claiming I would sleep better with him which is generally true but not this night. I was my horrible self. I kept him up all night too. The only thing I can think of is I haven't been taking my magnesium consistently.
Last year I started taking magnesium to help me relax which helped tremendously. I even got the guy hooked on it now! When we started dating, he was a light sleeper and snored horribly. I truly wondered if I could keep dating him because his snoring was terrible.
Once I started him on magnesium though, it got SO MUCH BETTER. He hates his snoring so that's how I've gotten him to be consistent about taking it. Hey, whatever works! As a side note, 80% of people are magnesium deficient and don't know it.
All this to say, sleep is a privilege. When you get it, you cherish it. Because let me tell you, when I don't get it, I'm one big cranky pants and all I want to do is eat chocolate. It's like PMS on steroids. Not pretty. So this week I'm committed to taking my magnesium every night so I can be bearable to be around and be committed to eating well.
Sriracha Parsley Chicken Burgers
Whipped up these Sriracha Parsley Chicken Burgers on a whim the other day. Truly bought the ground chicken at Sprouts with no clue what I was going to do with it. Got home and somehow it turned into Sriracha Parsley Chicken Burgers, and what a meal it was!
Cooked mine on my trusty grill pan, served between roasted sweet potatoes with all the toppings. Made such a quick, flavorful and easy meal!
Sriracha Parsley Chicken Burgers
Ingredients
- 1.25 lb ground chicken or ground meat of choice
- 1/4 cup Sriracha
- 2 tablespoons parsley
- 1/2 teaspoon garlic powder
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prepheat a grill pan to medium heat with extra virgin olive oil.
- While the pan heat, place the chicken in a mixing bowl with Sriracha, parsley, garlic powder, salt & pepper.
- Break up the meat with your hands, working the other ingredients into it thoroughly.
- Divide the mixture into 6 even amounts then form each one into a patty with your hands, flattening gently.
- Place each patty on the grill pan. Cook 5-7 minutes the flip the burgers, cooking another 5-7 minutes on the other side until cooked through.
- Remove from pan and serve immediately.
- Store in the refrigerator up to 1 week or in the freezer up to 1 month.

Yum! This screams mustard and salad to me! Magnesium is huge you need to get back on that! Also, it could be blood sugar waking you up- that's the number one reason people wake up in the middle of the night.
Mustard and salad? LOL My blood sugar is fine. It's my anxiety making me crazy.

Yum!! I had ground chicken in the freezer and no idea what to do with it. These were so flavorful and definitely going into our rotation. Hubby loved them too. He usually wants beef in a burger so this was good news!
