Why are my chicken burgers with ground chicken chewy?

Chewiness usually means the burgers were overcooked. Ground chicken patties are much leaner so stick to grilling them for 5 minutes on each side. The patties will continue to cook once removed from the heat. For the best results, use a meat thermometer and cook until the internal temperature reaches 165°F.

  • 1 lb Ground Chicken Breast
  • 1/3 cup Avocado roughly mashed
  • ¼ cup Salsa
  • 1 teaspoon Cumin
  • ½ teaspoon Red Pepper Flakes
  • Salt and pepper to taste

Instructions
 

  • Preheat a grill or grill pan to medium heat. If using an electric griddle or oven, heat to 350 F.
  • Add all ingredients for the burgers to a small bowl. Using your fingers, mash the avocado and disperse the ingredients evenly throughout the meat.
  • Divide the meat into even sections and press each section together between your hands to flatten and form into a burger patty.
  • Place the burgers on the pre-heated grill cooking 5 minutes on each side, or until cooked through. Remove burgers from grill and serve immediately. I recommend serving on a bun with yogurt dip and avocado slices!

  • Mash the chicken mixture gently to ensure everything is evenly mixed. Your hands are the best tool for achieving the right texture.
  • For juicy burgers, try using an electric non-stick grill. If grilling outside, spray the grill with cooking spray to prevent sticking.
  • It is best to choose an avocado that is ripe and squishy to the touch. If the avocado is too firm, it will not make the best ground chicken burgers.
