Happy Memorial Day friends! Hope you're enjoying this extra long weekend. It was a relaxing weekend here hanging with the guy, we golfed, ate out a lot, then went to Sedona yesterday to hike.
It was the first weekend I was free from the homework Gods and it was glorious. I almost didn't know what to do with myself with the free time, which is ironic because I have lists and lists of things I should be doing but had zero desire to tackle any of them this weekend.
Lists are helpful, but they also stress me out. I have so many pilled up from 18 months of school. I've finally bit the bullet and asked my assistant to jump in and help out. Obviously, asking for help is still hard for me but I'm working on it. It's needed for my sanity and health!
So, yes this weekend I just needed downtime to rejuvenate and get the creative juices going again. In fact, I wasn't going to blog today but decided I just had to pop by with this delicious BBQ Chicken Taco Bowl before I head to the gym to teach spin.
This is recipe is a goodie! If you're looking for an easy lunch or dinner idea, this is it. Basically, I upcycled that Crockpot BBQ Chicken recipe you saw last week and turned it into a taco like salad bowl. I added blacked beans, chopped zucchini, bell pepper and shredded lettuce.
Mixed together with the sweet and tangy homemade BBQ sauce, this is meal tastes like upscaled Mexican food. Perfect for a quick summer meal.
Personally, I've gotten into a big rut with my eating. I'm a creature of habit and since losing 80 pounds I've gotten into the routine of eating the same things over and over. After awhile, I began to notice certain foods were no longer satisfying me which means it's time to switch things up!
That's why I created this BBQ Chicken Taco Bowl. Because I love having go-to meals I can easily prep each week for lunches and quick dinners so I'm not frazzled figuring out what to eat in between meeting with weight loss clients, freelancing, writing and teaching at the gym. It makes life much easier, and this meal is one I'll be making over and over this summer.
BBQ Chicken Taco Bowls
Ingredients
- 2 cups iceberg shredded, romaine or any green lettuce
- 1/2 cup red bell pepper diced
- 1/2 cup Italian zucchini diced
- 1/4 cup black beans no salt added
- 1 cup Crockpot BBQ Chicken
- 2 tablespoons homemade BBQ sauce I like Annie's for a store bought version
Instructions
- Make the BBQ Chicken in a slow cooker or Instant Pot.
- Assemble the BBQ Chicken Taco Bowls by adding lettuce to a large bowl.
- Top lettuce with bell pepper, black beans, Italian zucchini and crockpot BBQ chicken. Add BBQ dressing on top and devour!

It's so nice to reclaim all that time that that was spent on homework. The hubs is finally homework free and I love that he can hang out in the evenings again. Glad you took some time to relax.

I'm totally in a bit of a meal rut right now too. Alex and I only have a few dinners together a week right now, so I am not doing so well planning things out--I'm more so kind of doing things on the fly. I need to make a big batch of slow cooker chicken. OOOO MAYBE I WILL DO THAT TODAY
I kind of am too. Not sure why? I think it's because I've been cooking so much for freelance work that I have zero motivation to do a lot of meal prep, but I really do need to get back on it.
