It's June! All my favorite summer eats are coming your way! One of the questions I get a lot is how to make summer meals quick and stress-free. I know, easier said than done right? Summer is a tricky time of year! Vacations, travel, activities means different routines and schedules and that throws many people off their game.
I get it. I used to over-complicate my meals too, which lead me to feeling defeated. I honestly thought my life would turn into eating granola bars, smoothies and subs. Haha. Thank goodness I've learned a few tricks in my journey.

So allow me, to share on of my FAVORITE must have summer recipes. And it all begins with the Instant Pot. If you haven't jumped on the Instant Pot bandwagon yet, you need to!
You can make a healthy meal in 30 minutes or less with it and believe me, I tried cooking a lot of ways. The Instant Pot is by far the easiest way I've found. Yes, it means having another appliance in your house but honestly, it will transform your summer meal prep.
This is one appliance you need to make your life easier!
Instant Pot Low Carb BBQ Chicken
Then you can make INSTANT POT LOW CARB BBQ CHICKEN! BBQ chicken is life in our house. We make it at least once a month and it pleases everyone. It's a versatile meal with delicious flavors and most importantly, it's EASY!
Thanks to the Instant Pot you can make it under 30 minutes (slow cooker version here). It's one of those meals where you set it and forget it for 30 minutes then come back to a ready to serve meal!
This BBQ chicken's also low carb. The BBQ sauce has no added sugar. I buy and trust Primal Kitchen BBQ sauce for their cleaner ingredients. I always tell my clients, you can add sugar but you can't take it away.
What You Need
- Instant Pot
- Chicken Breast
- Apple Cider Vinegar
- Chicken Broth
- No Sugar Added BBQ Sauce
Helpful Tips
Any BBQ sauce will work for this recipe, however, if you're trying to keep it lower carb look for a BBQ sauce with no added sugar. Most BBQ sauces do have a TON of added sugar. You can purchase BBQ sauces with no added sugar (like Primal Kitchen) or you can make your own homemade low sugar BBQ sauce and adjust the sugar to your liking.
Serve your Instant Pot Low Carb BBQ Chicken with sweet potatoes, cauliflower rice, over a salad, on a sandwich, and with brown rice, quinoa, or beans if not strictly Whole30 or Paleo. Lots of options here which makes it a great and EASY summer meal!

Instant Pot Low Carb BBQ Chicken
Ingredients
- 1.25 lbs chicken breast
- 2 tablespoons apple cider vinegar
- 1 teaspoon garlic powder
- 1 cup no sugar added BBQ sauce
- 1/2 cup chicken broth
- Salt and pepper to taste (optional)
Instructions
- Place all ingredients in an Instant Pot. Set the valve to sealing, cover, then steam 30 minutes.
- Release the value to release the steam then remove the cover.
- Use a fork to shred the chicken. It will shred very easily.
- Serve immediately over cauliflower rice, salad sweet potato, rice, quinoa or sandwich if not strict Whole30 or Paleo.

How much is a serving for this? I am trying to keep track of my food intake and I wanted to know if 1 serving is a cup or how many ounces for etc..

About 1 cup would be a serving. It really depends on how much meat you use as finding exactly 1.25 pounds of meat at the store is not always realistic. If you want the exact amount, you could weigh the total amount after cooked then divide by 4 to get the grams/cups per serving. I simply divide the finished product in fourths by eye balling.

I haven’t used the steam feature on my instant pot yet, does that help keep the chicken moist as opposed to the high pressure function? Thank you!

My IP does not have a pressure function. The steam function works as the pressure function on your model so that is what you would use.
