Place all ingredients in an Instant Pot. Set the valve to sealing, cover, then steam 30 minutes.
Release the value to release the steam then remove the cover. Use a fork to shred the chicken. It will shred very easily. Serve immediately over cauliflower rice, salad sweet potato, rice, quinoa or sandwich if not strict Whole30 or Paleo.
