Welcome to February! This year is already zipping by. How are you guys doing with your health goals. I made myself a meal plan last week because I didn't want to have to think about what I should be eating anymore.
It's much easier when you have a template to follow that tells you what to eat, and I have to say I love that I can go into the online portal and schedule the meals around my schedule. On this week's plan? Single Serve High Protein Brownies!
It's confession time. I like chocolate. Well, not as much as my father apparently. Over the holidays when my parents were visiting, the guy left a few of those single serve M&M's on the counter for me, and they disappeared in a few hours. But I didn't eat them. Honestly, I didn't need to eat them.
I assumed my mother was the culprit. She likes to eat my cookies. 🙂 So, when the guy and I jokingly told her at dinner one night she ate my M&M's she was confused and claimed she didn't do it. Then we turned around and my Dad's waving from the couch. That's his way of saying he did it. Ah, the M&M thief fessed up!
So I guess I inherited my chocolate cravings from him. As I've become more aware of my body and my cycle though, I've noticed this happens usually before my period. Something I never knew until I went off the pill a few months ago. Lots to tell you about on that topic, but I'll save that for another post!
Because I don't want to go overboard during that almost time of the month, I've been making these Single Serve High Protein Brownies. The recipe makes four, so I'll make them at one time then cook and eat one of them and save the others uncooked in the refrigerator until I'm ready to eat them.
They make the perfect late afternoon or after dinner snacks. Much easier than making a batch of brownies and trying not to eat them all. You feel me?

Single Serve High Protein Brownie
Ingredients
- 2 large egg whites
- 1/2 cup chocolate protein powder
- 1/4 cup applesauce
- 3 tablespoons unsweetened cocoa powder
- 1/2 cup powdered peanut butter
- 4 tsp creamy peanut butter I use Target brand organic peanut butter

Instructions
- In a mixing bowl, whisk together the egg whites, cocoa powder, applesauce, protein powder and powdered peanut butter until creamy and smooth.
- Divide into 4 ramekins and microwave 1 to 1:30 minutes, or until brownie is set.
- Top each with a teaspoon of peanut butter and any additional toppings.

Depends on the specific brands you use. They can be slightly off due to that or sometimes the apps themselves may not be accurate as much of the data in them is input by users and not always validated.

I just made these brownies, dough wAs a bit dry so I added more applesauce and a bit of vanilla which helped , very fudgy! Really satisfied the chocolate craving ! Thx

How many grams is one serving though ?

I do not measure my recipes in grams per serving. But you can certainly make the recipe and use a food scale to measure what the total grams are then divide by 4 to get the grams per serving.
