I have a confession to share with you today. Yes I am a nutrition student, health coach [in training], food photographer and just a little bit obsessed with fitness.
BUT.
The truth is I didn't always like vegetables.
In fact before and during my weight loss, I hated them. If you come here regularly, you may have a hard time believing that with the recipes I post but it's true. I've come a long way from my days of eating carbs, white bread, mac 'n' cheese, pizza, chips and every sugar loaded food under the sun. So how did I come to love them?
I learned How To Eat Vegetables Without Trying
Eat veggies for breakfast
If you follow me on Instagram, then you know my morning breakfast consists of some fancy egg concoction with veggies. Egg muffins and frittatas are other ways I like incorporating them in my eggs. Eggs are a simple way to sneak more veggies into your diet. Most of the time I don't even notice they're there.
I even sneak them in my pancakes.
Skinny dip
Blending veggies into a delicious dip like this edamame hummus is another way to eat vegetables and test the waters to see if you like them. I did this recently with a vegetable I thought hated and discovered I liked it in dip form. There's safety in dipping!
Transform veggies into soup
A pipping hot, filling soup like this split pea soup is a sure way to eat vegetables without trying. Soups are a guaranteed way to ensure you like a veggie. I don't know a soup I didn't like with veggies.
Bake with them
Baking with vegetables is probably the EASIEST way to eat vegetables without trying. You will never know they're there and they are amazing at keeping baked goods really moist. The options are endless on what you can do with them. Plus who's going to pass up an insanely delicious chocolate-y bread just because it has butternut squash in it?
Or a cookie?
Or a sweet carrot muffin?
Put them in a smoothie
The best way, in my opinion, to eat vegetables without trying is to blend them into a delicious smoothie. You don't notice them in there after they're blended up with a little fruit.

awesome ideas!! I'm lucky that i actually LOVE veggies, but there are other ways I "sneak" them in 🙂 -
egg muffins - peppers, onions, mushrooms, spinach, tomatoes
spinach in smoothies makes it a weird color but is tasteless!

Spinach is one of my favorites sneak ingredients but yes it does turn things funky colors. Haha!

I totally agree...vegetables can be something that we learn to like over time. That's why I try so hard to get them in my boys' bodies in any way that I can -- whether it's straight up, in a dip, or in a baked good!

I love putting them in smoothies. When I realized I could add a whole zucchini on top of all the greens I use, it was a magical day!

I'm lucky that I have always like vegetables. Now I just consume them at unnatural rates. Whenever people ask if I want to add in those things for extra veggies, I'm like, are you trying to MAKE me into one?
