I love baking with coconut flour. It's a great source of dietary fiber, healthy fat and more protein than regular flours. These coconut flour waffles are perfect for when you want a low carb waffle recipe that has all the texture and taste!

I make coconut flour pancakes all the time so I thought, why not make a waffle recipe using coconut flour too?

These waffles with coconut flour are just too good not to share with you. In fact, I had a low-calorie pumpkin pie recipe ready for you today but then at the last minute swapped it for this one. I just couldn't wait to share it with you!

So about these coconut flour waffle recipe... did I mention they're good? Not just good, but really good. As in, you need to grab your waffle maker and make them immediately. They're super simple. Just mix, pour and bake!

They make two very thick and filling coconut flour waffles which is why there are four servings in the recipe. One serving is half a waffle (it's a lot!) and I assure you, that's all you need. I enjoy my keto coconut waffles with my Waldorf salad recipe or a simple fruit salad recipe to ensure I get enough protein at breakfast.

It makes a hearty breakfast! Enough to keep you full until lunch. These easy coconut flour waffles also freeze well. I made a double batch last week and froze half. Great for meal prepping a healthy breakfast in advance!

This is the waffler maker I use, and it's important to note that all waffle makers work differently so if you have on different than mine, the baking time may be slightly different.

I also recommend you liberally spray or grease the your waffle maker, and do not undercook your coconut flour waffles because they will crumble easily. Coconut flour is very particular to bake with!

Ingredients
 
 

  • 2 large eggs
  • 1/4 cup unsweetened almond milk or milk of choice
  • 2 tablespoons unsweetened almond milk or milk of choice
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon

Instructions
 

  • Heat a waffle maker and spray the inside with nonstick cooking spray liberally. Do not use butter or coconut oil or the waffles will stick.
  • Place eggs in a mixing bowl with almond milk (use 1/4 cup of ALMOND milk PLUS 2 tablespoons of ALMOND milk - this is not an error!) and whisk together until smooth.
  • Fold in coconut flour (measured properly), baking powder and cinnamon until combined. Do not over mix. The batter should be thick. Note - if you overmix it will yield smaller or fewer pancakes.
  • Transfer the batter to the waffle maker and cook 10 minutes. DO NOT REMOVE or OPEN TOO SOON OR WAFFLES WILL FALL APART. All waffle makers are a different, mine cooks quickly so you may need to cook yours longer than 10 minutes.
  • Carefully lift the waffle from the waffle maker with a small spatula and transfer to a plate while you cook the next one. It's very important you DO NOT prematurely remove the waffle from the maker or flip the waffle or it will fall apart. Note, you will need to add more cooking spray before adding the remaining batter.
  • The recipe makes two large waffles (my waffle maker is large). One serving equals a half of a large waffle.

Notes

  • Measure coconut flour properly otherwise your waffles will be dry and crumbly.
  • When baking with coconut flour, you should expect a drier texture compared to grain flours. If it is very dry, then the flour may not have been measured properly or may be expired.
  • Eggs and milk should be room temperature for making coconut flour waffles. If the ingredients are too cold, it will stiffen the batter. 
  • Coconut flour does not bake like other flours. You must not over mix the batter or it will absorb the liquid ingredients too much and your waffles will not turn out. A simple stir or two to combine is enough, don't over do it!

    The recipe was easy to follow and it made 3 waffles. The taste is really not for me, it has a very strong egg taste. My toddler loved it though so at least it didn’t go to waste.

      Anytime you use bake with coconut flour, you have to use a lot of fat (eggs) to make coconut flour hold together. Egg flavor with coconut flour should be expected. You can add cinnamon, berries, etc.to counteract that.

      You should always expect to see cholesterol higher with coconut flour and coconut oil in recipes. That is why coconut based ingredients may or may not be appropriate for everyone.

    Nice basic recipe. We have a thick waffle maker so idk if that's why they came out a little dry? I added 1/2 tbsp oil and that seemed to help. Also I added a splash of vanilla and a small pinch of salt for a lil extra flavor. The recipe says not to use coconut oil for the waffle maker but we did and it worked - but we also have a non-stick waffle maker so that probably makes a difference.

    I made your turkey meatloaf last night and then these waffles this am...first time in my life both turned out just like your pictures. So beautiful so delicious so perfect! I added a tsp of cacao powder and chia seeds to the batter. Didn't fall apart, took about 5 minutes to cook (nonstick iron with olive oil) came out perfect. Served with blueberries and peanut butter drizzle Didn't even need any sweetener. I could not be any more ecstatic with how they turned out. I ate 1/2 with half a cup of papaya, cup sauted vegetables, an egg and one mini turkey sausage. Thank you!

    I can't believe that after 5 years you keep reading the commentaries, thank you.
    This recipe is magical, I'm very new at keto, helping my SO with this new lifestyle that can become overwhealming really fast, but recipes like this and webs like this make it easier.

    This recipe has already become a staple, is so easy and fast, I've used cow's milk (and no cinnamon, we wanted them savory) and it works really well, but I have to say that I added 1/6 tso of xanthan gum, as I got a little afraid that it would crumbled in my hands for all the warnings you give in the instructions, as I said before, that didn't happen, the waffles were really good and are a total success, thanks again

    Ps: you could've put 6 tablespoons or 3 oz instead of 1/4 cup + 2 Tbsp of milk to avoid confussion
    and the text beside the boxes for the submission of the comments is missing, you just see the boxes to click there, no text.

    These were not good. Extremely dry and inedible. I followed the instructions to a T. I used high quality, organic ingredients.

    I can't be the only one who thought these were simply inedible. I slathered them with peanut butter to try to make them at least semi palatable and I can't even make myself eat them. Highly disappointed.

      You are the only person who has given a negative review. I will say from coaching thousands of people that taste buds are individual. Coconut flour recipes are also not for everyone and some people's taste buds hate coconut flour based goods and their taste bud's desire more sugary flavors. If you felt it wasn't palatable then your body may not like coconut flour &/or your taste buds desire a more sugary flavor. I have also noted that not all coconut flour brands taste good. There are some brands I simply cannot eat.

    Wonderful! I made the coconut flour waffle and also a chaffle (since I had a hot waffle iron already ). The waffle won hands down. It felt like I was eating BREAD! (Angels singing!) I've missed it so much!!! Thank you!!!

    I doubled the recipe and got 8 smaller waffles. I also added 2 scoops of Young Living vanilla spice protein powder and 2 overripe bananas. No trouble sticking. Consistency was different than regular flour, but still delicious.

    Followed this recipe to the letter, and the waffles were DELICIOUS! Perfect texture, hearty and filling. I did eat both waffles before I read the actual serving size. Oh well, they were too good! Flavor was spot on! Fresh fruit is about all anyone needs to amplify this waffle experience, rather than other fat or sugary toppings. I will be using this recipe for all future waffles!!!

    What can I use instead of cinnamon?

      You could omit the cinnamon. Nutmeg is what I would use instead, but generally if someone isn't a fan of cinnamon they're aren't going to enjoy nutmeg so I'd recommend leaving it out.

    These tasted delicious and so fluffy! My family enjoyed these a lot. I believe I mismeasured or did something wrong though, because the waffles fell apart almost completely when I lifted the lid of my waffle maker. I’m planning on making these again but with a bit of flax meal to see if that binds the waffles better.

    Still a delicious recipe nonetheless!

      So glad you enjoyed them! The falling apart is usually from not them cooking long enough. All waffle makers are a little different and the time can vary. Also, what you use to grease your waffle maker can cause waffles to fall apart. I've noted when I make mine with avocado oil and olive oil it doesn't work - it makes the waffles fall apart, but when I use coconut oil they stay together.

    Wow! I never usually leave comments but these were so good! Most the time when I try homemade gluten free things theyre a total flop, these were perfect! I used my Dash mini waffle maker, zero problems with sticking or burning or being under done. Paired amazing with some fresh raspberries and homemade maple syrup! Thanks!

      I have not tested anything other than the ingredients listed. Coconut flour is very particular so I would not risk it.
