It's been one month since I graduated from nutrition school. Now that I have my weekends back from studying, I don't know what to do with myself.
It's not that I don't have a zillion things to do like cleaning, laundry, groceries, killing black willows in the garage (<- truth the guy did), but who wants to spend all weekend doing that? BLAH!!!
Having my weekends back has given me time to create more healthy recipes. Is that a good thing? I sure how you guys agree because this Strawberry Cheesecake Overnight Oats recipe is a goodie.
In full disclosure I'm not a fan of overnight oats. They're mushy and don't have the substance to tame my hangry stomach in the morning. Although I will say as a food photographer, they sure do make pretty pictures.

These overnight oats, however, are made with cottage cheese and have fewer oats than a traditional overnight oats recipe making them higher in protein and more filling. So you still get that creamy, chewy texture, but with a thicker, more dense and filling consistency.
I called this recipe overnight oats, but technically you can make it either way - overnight or on the fly.
Unlike traditional overnight oats that need to soak several hours, you don't need to soak these because the cottage cheese is thick enough to soak up the oats instantaneously.
So if you're short on time, or don't have time to meal prep these are for you! Great for breakfast or an afternoon snack. That's actually my favorite way to eat them.
The recipe's made with just 4 ingredients - cottage cheese, gluten free oats, almond milk and strawberries. Easy, simple, oh, and did I mention D-E-LICIOUS???
I know. It's an odd combination, but have you ever noticed that weird food combinations are the best? This is one of them! There's just something about the natural sweetness of the fruit that pairs so well with cottage cheese. Trust me!
I don't post recipes I don't eat myself, and this is one I've been eating a ton lately. Trying to use ripe summer strawberries. I have so many!
The guy thinks I'm weird and gives me a face every time I eat it. He refuses to eat anything creamy or white. Says it's gross. Oh well, more for me! Muahahahah!!!

Strawberry Cheesecake Overnight Oats {GF, Low Cal}
Ingredients
- 1 1/3 cups cottage cheese
- 1/2 cup Gluten Free Rolled Oats
- 1/3 cup unsweetened almond milk
- 1 cup chopped strawberries
Instructions
- Stir all ingredients together in a mixing bowl.
- Divide the mixture evenly between two mason jars or meal prep containers.
Notes
- This recipe can be made overnight or the day of. The longer it soaks the better it is though!

What size mason jars would best use for this recipe? I currently don’t have any but was wanting to get some for this kind of situation. Also, would yogurt be a good substitute for cottage cheese? I sometimes get tired of eating lots of cottage cheese. I do not like Greek yogurt either. I know, I’m different. Lol

I used a 16 inch mason jar for this recipe, but you don't need to buy a mason jar to make the recipe. Any container would work. And yes, you can eat yogurt in place of the cottage cheese. I would try a lightly sweetened yogurt that's high protein like Oikos vanilla or another fruit flavor. Plain yogurt isn't all that tasty.

Would you like cottage cheese heated? I would not so I personally wouldn't heat it. But if you would enjoy it, then you could heat it.

I used to make these alllll the time! They were great for when I was competing because I needed the protein from the cottage cheese. I need to get back on my cottage cheese kick. I wish I could find the salt-free in San Diego.
