How To Make Slow Cooker Chicken and Potatoes
This easy crockpot Italian chicken and potatoes doesn’t require a lot of work! It will soon become your favorite Italian crockpot meal.
All you need to do is prepare your chicken, carrots and potatoes then toss in your slow cooker with the remaining ingredients and let your slow cooker do the cooking for you!
You will have a healthy and delicious meal in under four hours that’s cooked to perfection.
Serve your healthy chicken dinner with an Italian chopped salad, a cucumber and red onion salad, or a bowl of homemade healthy tomato soup for a complete meal!

Crockpot Italian Chicken and Potatoes
Ingredients
- 4 boneless skinless chicken breasts, 4 ounces each
- 1 lb baby red potatoes, washed and cubed with skin on*
- 2 cups baby carrots
- 2 tablespoons extra virgin olive oil
- 2 tablespoons Italian seasoning
- Salt and pepper to taste
Instructions
- Lightly spray the inside of the crockpot with nonstick cooking spray. Add 1 cup of water.
- Place potatoes on the bottom of the crockpot set to high heat and sprinkle with salt.
- Pat chicken breasts dry with paper towel. Place them on a plate and add extra virgin olive oil, salt, pepper.
- Rub the oil, salt and pepper into the chicken using your hands. Place the chicken in the crockpot over the potatoes. I like to add a little water or broth to my slow cooker to retain moisture. Next add the carrots and Italian seasoning.
- Cook on high 1/2 to 2 hours or on low 4-5 hours until chicken is tender and carrots and potatoes are soft. The amount of time will depend on the thickness of your chicken breasts and if your slow cooker runs hot. Test the vegetables to see if they are tender and use a thermometer to check that the chicken is 165 F.
- When the chicken and veggies are done cooking, turn off the slow cooker and serve warm!

- Any potato can be used in the recipe. If using sweet potatoes, they may need to be removed sooner than regular potatoes as they have less starch to break down.
- 1 serving equals 1/4 of the meal – 1 chicken breast, 1/2 cup carrots and 1/2 cup of potatoes.

I don’t understand step 2. Are we cooking the potatoes before adding the remaining ingredients? If so for how long? I wanted to cook the meal on slow.
Step 2 says to place the potatoes in the slow cooker and set the slow cooker to high. So no, you are not cooking them ahead of time. Step 3 says to pat the chicken dry and prepare them with the olive oil, salt and pepper then in step 4 you are placing the chicken in the slow cooker with the potatoes. Whatever time it takes you to pat the chicken and prep it with olive oil, salt and pepper is the only time the potatoes are cooking alone. It’s just a few minutes.
This says 3 hours at the top, then 4-6 at the bottom. How long do I cook this?
I just made this recipe myself and updated the instructions to be more specific as the time will depend on a few factors.

Can I add more water instead of chicken broth?
Yes that would work!
Can you add like mushrooms and bell peppers to this?
You could. There isn’t a sauce with the recipe so they would steam in the crockpot with the potatoes and carrots.
Would cooking it 6-8 hours in low be just as good?
Yes that should work.
Can i use a 3 quart crockpot? If so would i have to cut the ingredients in half??
I would imagine you could with half the ingredients.
Mine was so dry! I only did it for 4 hours but it was incredibly dry. I am new to crock pots and cooking in general. How can I fix this for next time?
Some crockpots get really hot and dry out the food so you can try cooking it 2-3 hours next time. I would also recommend adding some broth to the bottom of the pot. This will add steam and keep it moist while it cooks!

I am a firm believer in “let food be thy medicine and medicine be thy food.” I work as an RN and see SO MANY health problems caused by poor diet. “Sir you have kidney failure and uncontrolled diabetes and your blood pressure is making my own blood pressure rise… no sir, you can’t have french fries, burger, and chips.” Good job taking the steps in the right direction!
