Spring is here and if you're like me, you've got summer on your brain! Time to tighten up the macros and strengthen your meal prep game. Meal prep doesn't have to be complicated and time consuming. I mean if you love batch cooking and prepping a bunch of meals at once, go for it!
Many of my clients do batch prepping each week and it works great for them. Others, like my meal plan subscribers, have told me it's too overwhelming to make that much food.
That's why I have a handful of easy meal prep lunches that are 10 minutes or less. So you can make a healthy, uncomplicated meal quickly without getting burnt out!

The flavors are insane and the celery adds a nice crunch! It contrasts the heat by adding coolness. Always a perfect combo in my opinion!
Serve it over a bowl of greens, in a wrap, tortilla or on gluten free bread. This recipe also doubles as a dip or appetizer. Serve it with chips, raw veggies and you've got a party. A hot one!
What You Need
- Cooked Chicken Breast
- Low Sugar Buffalo Sauce
- Greek Yogurt
- Celery
Helpful Tips
My biggest tip for this recipe is to use a buffalo sauce that's Paleo or low sugar. Condiments are the biggest culprits for added sugar and that sugar disrupts hormones and causes cravings. While this is a healthy recipe, the ingredients you choose are what make it healthy!

Greek Yogurt Buffalo Chicken Salad
Ingredients
- 15 oz chicken breast cooked and shredded
- 1/2 cup Greek yogurt plain
- 2 tablespoons Paleo buffalo sauce
- 1/2 cup celery diced
Instructions
- Place all ingredients in a bowl. Stir to combine then divide into 4 meal prep containers.
- Serve on bread, in a salad, wrap or tortilla with greens for a quick meal.
Notes
- Any buffalo sauce can be used. I recommend the Paleo one as it does not have added sugar.
