Last official weekend of summer! I'm already seeing people post on Instagram that it's cold where they are and I'm jealous.
We're still sporting 100 degrees in Phoenix and it probably won't end until November. I wasn't going to post this weekend, but I've had this yummy Meal Prep Tuna Taco Salad in the wings for weeks waiting for me to post for week.
A lot has been going on behind the scenes getting ready for the 14 day sugar reset challenge (challenge sign up open this Tuesday Sept 4th!) and I lost track of this goodie. It really is a must try for your weekday meal prep!
To lighten up the tuna salad, I used plain Greek yogurt then added a bunch of seasonings to give it a genuine taco flavor then added a grape tomatoes and diced bell pepper. Because...always more veggies! It sounds liked a strange combo, but it is really good!
Even better? It takes less than 10 minutes to prep! I'm all about keeping meal prep easy. No one wants to spend hours in the kitchen over the weekend prepping food for the week.
This recipe is a quick and fast way to eat healthy without spending hours in the kitchen. High in protein and loaded with veggies, this is definitely a meal prep I'll be making over and over again!
Meal Prep Tuna Taco Salad
Ingredients
- 15 ounces tuna
- 1/2 cup Greek yogurt plain
- 1/2 cup green bell pepper diced
- 1/2 cup grape tomatoes sliced in half
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1 teaspoon dried cilantro
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon paprika
- 2 cups cabbage
- 1 green bell pepper sliced
Instructions
- In a large mixing bowl, combine the tuna, Greek yogurt, 1/2 cup diced green bell pepper, grape tomatoes chili powder, cumin, dried cilantro, cayenne pepper and paprika. Stir to combine well.
- Divide the mixture into 4 meal prep containers (~1 heaping cup). Then add the cabbage and slices of green bell pepper into each container, dividing it evenly in the container.

- 1 serving of the tuna taco salad is ~1 heaping cup
