The secret to keeping the weight off for many years? Eating fish multiple times a week! Fish is one of my favorite sources of lean, healthy protein and it's packed with omega-3. So good for reducing inflammation and keeping a lean waistline.

I know what you're thinking though. Baked cod in January? YES!!! This Sheet Pan Cod with Veggies can be eaten anytime of year. In fact, I eat fish year round. Mostly because it's so easy to make. Cod in particular is the easiest fish to make because you don't have to thaw it.

I place frozen cod in an oven friendly dish and bake at 350 F for 30 minutes when I'm in a bind for a quick meal. You know, those night where you haven't meal planned anything and you're staring at the refrigerator contemplating ordering pizza?

Yeah, those are the nights you make fish. I always have several frozen veggies in the freezer for tossing together those kinds of meals.

This Sheet Pan Cod with Veggies is exactly that kind of meal! One you toss on a pan, bake and eat! One that takes 30 minutes to make, with minimal prepping and you have a deliciously EASY meal.

I'd say that's pretty freaking good for healthy food because 'um yeah eating healthy can be a pain in the you know what and time consuming. Exactly why I started Skinny Fitalicious Meal Plans to help others make healthy eating easy, convenient and money saving!

Something else that makes healthy eating easy? Ordering your fish from Sizzlefish! I've been ordering their fish for over 3 years now. I think I mentioned before that I met the owner at a conference a few years ago, and ever since I've been hooked.

Their fish is delivered to your door frozen and individually portioned. I love that because I don't have to worry about overeating. Getting fish delivered to my front door from them has been a life changer. Check it out!

Then you can make this easy peasy Sheet Pan Cod with Veggies and know you're eating a good and delicious meal without a ton of effort. Capesh?
