You wanna know what's really weird? I eat fish all the time, but I think I have one, maybe two fish recipes on the blog. So I was thinking about this and came to realize I've been creating a lot of recipes based on what I think you guys want to see which usually entails something drenched in chocolate.

I'm sure you're not complaining about that! I certainly am not. Unfortunately, I can't live off of chocolate every day. I know, the horror! I can only imagine the size I would be if I were a dessert blogger. Scary! asparagussalmon

It wasn't until I was making this One Pan Salmon Asparagus & Sweet Potato that I realized I had veered from my why. 

You see when I created this blog, it was meant inspire others to choose healthier foods and to find balance and if I'm only ever posting chocolate then that's not much balance for you or me.

So I'm not going to feel bad about posting a One Pan Salmon Asparagus & Sweet Potato recipe. In fact, writing this was a good reminder for me to remember my WHY.

I think sometimes when you're doing something it's so easy to forget why you started in the first place. Does that happen to you?

One Pan Baked Salmon Asparagus Sweet Potato There certainly is no question about whether or not you should be making this One Pan Salmon Asparagus & Sweet Potato though. Actually, I'll give you three reasons.

Ready, set, go... Number one. It's only one pan which means only one dish to clean up. I don't know about you, but I feel like I am constantly cleaning the kitchen.

One pan equals problem solved! Reason number two. It's EASY! All you do is throw everything on the pan, sprinkle it with seasoning and let it bake away. No cooking required means a perfect no-brainer dinner for any night of the week.

Number three. Everyone needs more omega-3s! Research has shown that omega-3 foods lower inflammation and reduce chronic diseases like heart disease, cancer and arthritis. They're also important for the brain and memory.

Surprisingly, most people are very deficient in omega-3 and salmon is a great source of it along with nuts, seeds and other cold water fish. And reason four.

It's delicious! And who doesn't want an EASY dinner, that tastes like it came from a restaurant that only requires one pan and that tastes amazing?!? Oops...this was only supposed to be three. Oh well, you got a bonus! This One Pan Baked Salmon Asparagus & Sweet Potato is perfectly baked on a single pan for an EASY and filling dinner. Ingredients
 
 

  • 3 salmon filets 3 ounces each
  • 1 bundle asparagus
  • 2 sweet potatoes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • Salt and pepper

Instructions
 

  • Preheat oven to 350 degrees F. Prepare a baking sheet with nonstick cooking spray or parchment paper.
  • Place salmon filets in the middle of the pan, next arrange the asparagus on the sides lengthwise and then sprinkle the sweet potatoes throughout the pan.
  • Season everything with salt, pepper, garlic powder and thyme.
  • Bake at 350 degrees F 30 minutes until salmon is flaky and vegetables are tender.
  • Remove from oven, plate and devour!

    30 minutes seems a long cooking time for uncovered salmon at 350 degtees. Does the fish not dry out?

      Not with my oven. If the texture doesn't suite your palate or you like your fish less cooked or if your oven cooks faster, then simply cook 20-25 minutes! Easy solution!

    Should I use some kind of oil on the potatoes? Also can I replace the asparagus with broccoli? (Only because we ate asparagus last night). Same seasoning and cook time good?

      I didn't use any oil and yes you can substitute broccoli.

    I've never thought to bake it all in one pan! I usually grill the fish, bake the potato, and saute the asparagus. This is brilliant! Definitely trying soon!

      You will definitely love! So much less cleanup and I can't grill in the summer. It's just too hot in AZ so this is my way of "grilling."

    Haha, I started realizing that from Semi-Sweet Tooth, too. I started writing to encourage balance, but my balance has become all dessert recipes! Cheers to switching it up and get back to basics, lady!

    This looks delicious. We're only good at grilling salmon, which I find to be more difficult, but we put the effort in. This looks like a great way to easily bake a health dinner when we're in a hurry. Love it - can't wait to try!
