This post begins with a public service announcement to always be aware of your surroundings. Last week I came out of Walmart, was putting my groceries in the trunk when I suddenly had an eerie feeling that someone was watching me.

I turned around to find a man in a car right behind me, staring at me from his window. The way he was looking at me I guaranteed his intentions were not good. He was so close to me he could have reached out and grabbed me. Scary!

I immediately jumped in my car and locked the doors. Strangely, he didn’t move his car until I put mine in reverse. The entire drive home I was paranoid watching the rear view mirrors to make sure he wasn’t following me.

When I got home, I called the guy and he freaked telling me I’m no longer allowed to go there alone. Yeah, like that’s realistic! Now I tell him whenever I go there just in case. He always tells me “please don’t get abducted.”

In all seriousness, this happened to me in a matter of seconds (I only had one bag of groceries) and at 8:00 in the morning.

If it could happen to me, it could happen to anyone so really be aware of your surroundings and who’s around you at all times.

I’m usually good about that from my years of traveling as a consultant around the world, but obviously on this day I wasn’t.

They’re based off my 4-ingredient pancakes that have a secret protein ingredient. Don’t worry, you can’t taste that ingredient in them.

I can’t tell you how many people I’ve convinced to eat them that have told me they don’t like that ingredient on its own. That just proves you can’t write-off a food.

There’s many ways to eat things. Be open to trying them, and you may be surprised what you discover.

Ingredients

  • 2 cups Gluten Free rolled oats
  • 12 egg whites
  • 2 cups low fat cottage cheese I use Lactaid
  • 1 cup raspberries
  • 1 tbsp chia seeds
US Customary - Metric

Instructions

  1. Heat an electric griddle to medium high heat. If using a skillet, spray with nonstick cooking spray.

  2. Add all ingredients to a food processor or blender and blend until mixed thoroughly.

  3. Scoop ¼ cup of the batter onto the skillet to form one pancake. Repeat for the remaining batter until the griddle is full.

  4. Cook until small bubbles begin to appear then using a spatula flip and cook another 2-3 minutes.

  5. Remove promptly from the skillet and place on a cooling rack while you repeat the process for the remaining batter.

  6. Store the pancakes in the refrigerator up to one week or freeze up to one month.

    So scary and so glad it all turned out OK. I’m a big believer in listening to our intuition and yours were screaming at you. I’m already trying to help the child refine that because I believe at heart we are animals and our instinct always knows.

    Hi! I would love to try these but I don’t want to throw away 12 egg yolks. Do you think I can substitute the 12 egg whites with maybe 5 or 6 eggs?

      You can always substitute whole eggs, but keep in mind that will significantly reduce the amount of protein which is important for satiety and fat loss as well as increase the calories.
