Oh, thank goodness it's Friday! These summer days are wearing me out. Long days somehow translate into me doing more work and not getting enough sleep. Well, it's also like a thousand degrees outside so unless I'm in the pool there's nothing else to do this time of year except be indoors working. I guess that's why they call it the dog days of summer!

This week was a busy with teaching swim lessons again and getting back in the groove after a fun filled four day weekend in L.A. for Blogfest/IDEA last weekend. I didn't help myself either by volunteering to sub a couple cycle classes this week. At least, I didn't have school to come back to this week. Next week a new round of courses start so I'll be hitting the books again.

My swim director implied to me this week she needs more help to cover lessons (they're adding more to increase membership this summer), and I couldn't help but feel really torn. Part of me wants to jump in and help out, but part of me knows I need boundaries otherwise I'll overextend myself.

After thinking through it more, I realized as much as I love giving back to the community and teaching lessons, this is all I can give right now. My priority has to be school and my coaching practice, and truthfully, I could probably make more money working at McDonald's. It's not worth sacrificing more of my time because I'll have to sacrifice other things.

Coming to that conclusion was not easy. I hate being in those situations where your heart feels torn between two things you love. Life certainly is not filled with easy choices and those choices are not guilt-free either.

But thankfully, the food I make is guilt-free so I have one less thing to feel guilty about in life. Well...mostly guilt-free. 😉

These Zucchini Greek Yogurt Pancakes are EXACTLY what you need to make your weekend guilt-free! They're packed with all good things. Whole grains (<- good carbs), zucchini (<- fiber, magnesium, potassium & more), Greek yogurt (<- protein) and cinnamon (<- anti-inflammatory & natural sweetener).

I almost called these Zucchini Greek Yogurt Pancakes crepes because they're fluffy like clouds on the outside, yet creamy and light on the inside. They literally melt-in-your-mouth.

I make a batch on the weekend and have them ready to go for breakfast during the week with my egg muffins. They nutrients are perfect for post workout recovery especially with a dollop of healthy fat like nut butter on top. Oh yum! I better make some time for baking this weekend and sleeping. Hope you do too!

Ingredients
 
 

  • 1 cup zucchini ~1 small zucchini
  • 2 egg whites
  • 1 cup Greek yogurt
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 3/4 cup Gluten Free oat flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 teaspoons baking powder

Instructions
 

  • Heat a nonstick electric skillet to medium heat.
  • Add all ingredients to a blender or food processor & process until smooth.
  • Once the skillet is hot, scoop 1/4 cup of the batter onto the skillet to form a pancake.
  • Cook 3-4 minutes until small bubbles form in the center then flip and cook another 2-3 minutes.
  • Transfer pancakes to a wire rack to cool until all pancakes are cooked.
  • Enjoy with fresh fruit and nut butter!
  • Store in an air tight container in the refrigerator up to one week.

    The recipe does not specify if I need to drain/squeeze excess liquid from the zucchini, so I'm guessing I don't. Is that right?

    Those look great! I hate zucchini in its pure form, but love it mixed into baked goods.

    I'm a few weeks away from becoming a mom, and I already feel torn between my career and my family! I'm working to balance my work and life commitments now instead of later, when I am REALLY overwhelmed!

    I'm struggling with being pulled in multiple directions and not wanting to give anything up. I've added teaching yoga to my plate but haven't taken anything off to make room. I want to do it all!
