  1. Step 1: Pour Broth Into the Crockpot. Add 3 cups of vegetable broth, along with onion and garlic powder, salt, and pepper to the crockpot. Stir to combine them.

Sure, you can! The most time-consuming part of this recipe is cutting up the ingredients. Chop the potatoes and place them in a bowl of cold water to keep them from browning. Cover the bowl and keep it in the refrigerator overnight. You can also dice the ham and store it in the refrigerator overnight as well. You can also prepare the entire dish ahead of time and reheat when you’re ready to serve.

This easy ham, green beans, and potatoes recipe is the perfect 4-ingredient crockpot meal. It’s simple, hands-off, and delicious.

Ingredients 

  • 3 1/2 cups Low Sodium Vegetable Broth, or chicken broth
  • 2 tsp Onion Powder
  • 1 tsp Garlic Powder
  • Salt and Pepper to taste
  • 4 cups Yukon Gold Potatoes or Red Potatoes, new potatoes, diced into 2-inches
  • 3 cups Ham, diced or 1 lb. Ham Bone
  • 4 cups Green Beans, canned, frozen or fresh (water drained if using canned)

Instructions 

  • To a slow cooker, add 3 cups of the broth then the onion powder, garlic powder, salt and pepper then stir to combine.
  • Add the potatoes, ham and green beans. Note, if using canned green beans leave them out and add them the last 30-minutes of cooking.
  • Cover the slow cooker and cook on low for 6-8 hours or on high for 4 hours. While the meal cooks, check it halfway through and add more broth as needed. If using canned green beans, add them during the last 30-minutes of cooking.
  • If using a bone-in-ham, remove the ham from the slow cooker to remove the ham from the bone, dice it and place it back into the slow cooker. Stir the ham in and serve!

Notes

  • Wait until the last 30 minutes of cook time before you add canned green beans or else they will turn into mush.
  • Cut the potatoes into even 1” pieces to ensure they cook evenly and thoroughly.
  • If you cook with a ham bone, wait until the cooking time is finished. Remove it from the crockpot, cut off the meat, dice it, and mix it back into the slow cooker.
  • Cook on 6–8 hours on LOW or 4 hours on HIGH.
