To a slow cooker, add 3 cups of the broth then the onion powder, garlic powder, salt and pepper then stir to combine.
Add the potatoes, ham and green beans. Note, if using canned green beans leave them out and add them the last 30-minutes of cooking.
Cover the slow cooker and cook on low for 6-8 hours or on high for 4 hours. While the meal cooks, check it halfway through and add more broth as needed. If using canned green beans, add them during the last 30-minutes of cooking.
If using a bone-in-ham, remove the ham from the slow cooker to remove the ham from the bone, dice it and place it back into the slow cooker. Stir the ham in and serve!
Notes
Wait until the last 30 minutes of cook time before you add canned green beans or else they will turn into mush.
Cut the potatoes into even 1” pieces to ensure they cook evenly and thoroughly.
If you cook with a ham bone, wait until the cooking time is finished. Remove it from the crockpot, cut off the meat, dice it, and mix it back into the slow cooker.
