FRIDAY! I don't know why I still get excited for Fridays like I did when I was a kid. I actually do more work now on the weekends because of school so my excitement is short lived. I guess it's the notion of surviving the week without losing my mind which lately is probably warranted.
I'm not gonna lie. This week was a struggle for me. I couldn't focus mentally and felt physically exhausted. My throat hurts, my glands are swollen. I'm exhausted and not sleeping again.
I know part of the reason for this is that I have several large projects due for school this month which have increased my schoolwork twofold. I'm also stressing about surgery later this month.
I know these things are out of my control and I keep telling myself to do the best I can to get through it, but somehow the perfectionist in me keeps waving her nasty wand telling me I'm not doing enough.
Then I feel guilty and push myself to do more. It's such a vicious cycle.
The last few days I stepped away from the computer and books and spent time in the kitchen wrangling up recipes I've had on the brain. Cooking is so relaxing for me. Not to be confused with the cleaning up part though.
I found myself making recipes I hadn't made in a really long time like this Balsamic Apple Walnut Salad. It's one of my personal favorites!
But I can't take full credit for this recipe. Sarah gave me this recipe years ago. I'm pretty sure I ate this salad everyday at work for two years straight. Yes, it's that good!

The salad has very few ingredients. Crunchy walnuts, crisp lettuce, sweet apples, crumbly feta and balsamic dressing.
You can certainly add to it though. Chicken or cranberries would be amazing! It's light, cool, refreshing, and perfect for when you want something light yet filling.
Yes, this salad is filling! You wouldn't think it would be based on the ingredients, but it has the right balance of macronutrients which is key in building a filling salad.
I love making this Balsamic Apple Walnut Salad in the fall when apple season's on the brain, but it's certainly one to be enjoyed year round!
Balsamic Apple Walnut Salad {GF, Low Cal}
Ingredients
- 2 cups romaine lettuce chopped
- 2 tablespoons low fat feta for Vegan & Paleo, omit the cheese
- 1 medium apple sliced & cored
- 1 tablespoon walnuts raw, chopped
- 2 tablespoons balsamic vinegar
Instructions
- Layer all ingredients in a bowl, top with balsamic vinegar and DEVOUR!
- Use dressing to taste and feel free to add extra toppings.
