You guys should know by know how obsessed I am with this incredibly versatile squash. From soup to salad, eggs to pancakes this squash can be put in any dish and turn out good. I'm convinced I could live happily ever after if pumpkin ceased to exist and all that was left was butternut squash. Now I know what you're thinking. Why do all the peeling, cutting and chopping for butternut squash when you can get pumpkin in a can? Well, guess what? I take shortcuts to make all my recipes simple and easy.
You can buy butternut squash in a can too! A lot of supermarkets sell pureed butternut squash. You can also buy it frozen and some markets even sell it freshly cut. Winning! When all else fails, buy baby food. It's the same as the can, just be sure to make sure no other ingredients have been added. The best part of incorporating butternut squash in recipes, besides it's holly grail of deliciousness, is that it's low calorie and naturally gluten free. As we know, I'm the ninja of low calorie, gluten free recipes.

I just cooked up a butternut squash myself the other day. I roasted it with some other veggies, olive oil, salt and pepper and some other spices. It's delicious!

Butternut squash is to you what delicata squash and pumpkin is to me. I literally eat delicata squash like chips. Roasted with a little bit of salt and I am so happy clappy 😀
