Helllllloooooooooo! That is my all time favorite line from Seinfeld. Actually, the guy likes it way more than I do. In fact, he was at a stop light one day with his windows rolled down when he saw a text from me and yelled out loud "helllllloooooooooo."
Apparently, a guy in the car next to him gave him a weird look. He said to me "I don't think he knew that was Seinfeld." OMG. I swear this one is quirkier than me, but he sure makes me LOL a lot. 🙂
This has nothing to do with a Rainbow Detox Salad other than helllllloooooooooo spring and helllllloooooooooo bring on all the fresh, warm weather veggies!
Now that it's been in the 90's for a month here, I'm craving lighter, nutrient-dense foods packed with vitamins with a crispy, watery crunch. This restaurant style Rainbow Detox Salad does that and so much more!
One of my biggest pet peeves about restaurants is how horribly unhealthy the salads are. In fact, it's the #1 thing I tell my clients to avoid.
They lack real vegetables and lean protein, have way too much cheese, nuts, etc. and are usually sopping wet in dressing.
I tell them they'd be better off eating a burger and getting a naked side salad or steamed veggies on the side.
So yes, avoid the salads at restaurants like the plague! That is, unless you're willing to completely re-arrange the menu which I totally do because I'm not going to pay for something gross.
That's exactly why I leaving salad making for home! Restaurant-style as in, this is what restaurants should be serving!

This salad couldn't be easier to make at home either. I used store bought organic mixed lettuce then used this veggie chopper to make cutting the veggies a breeze.
It took a whopping 5 minutes for everything to come together.
The salad's perfect served as a light, vegetarian meal or dinner side. Pair it with a lean protein for a complete meal.
I also love the idea of tossing this in a mason jar for lunch on the go. Put the dressing on the bottom, layer the salad and veggies above it and shake, shake, shake when you're ready to eat. So good!
Rainbow Detox Salad with Orange Dressing {GF, Low Cal, Vegan, Paleo}
Ingredients
For the Salad:
- 1 10- ounce bag mixed organic greens I used a spring mix
- 10 cherry tomatoes sliced in half
- 1 yellow bell pepper diced
- 1 cup radishes sliced thinly
- 1 cucumber diced (~1 cup)
- 1 cup shredded purple cabbage
- 1 cup shredded carrots
For the Dressing:
- 4 tablespoons extra virgin olive oil
- Juice of 2 oranges
- 4 tablespoon apple cider vinegar
- Pepper to taste
Instructions
- Prepare the ingredients for the dressing in a bowl or glass. Place in the refrigerator until the salad is ready.
- Assemble the salads by adding greens to a large bowl and arranging veggies on top of them. Toss each salad then serve each with half the prepared dressing.

I so get disappointed with resultant salads. The come with like 1/4 of a tomato and crap! And you can never get the dressing. This looks great! Love the colors

Beautiful! The orange dressing sounds awesome and I love all the bright, crunchy veggies. This would be great with some grilled citrus chicken or shrimp for protein.
