I love pink. Growing up I couldn't stand it when my Mom tried dressing me in pink. I would throw a tantrum and toss everything off. Ugh, the horror of being a child! I'm glad those days are over.
Now practically everything I own is pink. Go figure. That's pretty ironic coming from a professed non girly girl. I'd say I'm more of a sporty, athletic girl who loves a cozy pair of Lulu yoga pants with flashy pink Saucony's and a pink Kate Spade wallet. I mean a little {or a lot of} pink never hurt anyone.
What's interesting about my adult fashion is that it carries over into my food. Bright, flashy, colorful, eye catching foods like this Pumpkin Pitaya Smoothie Bowl are what I'm drawn to.
Come to think of it, most processed {aka packaged and fast} foods look pretty blah. Do you ever think about that?
That blah-ness says something important about the quality of your food. Something with vitamins and minerals has nutrients your body needs for energy and immunity.
In the current environment we're living in with pollution, toxins and pesticides, that's something your body desperately needs to fight illness.
So while my sense of fashion influences what I eat, I like to think it as being drawn to what my body needs. A yummy, vibrant, pink bowl of Vitamin C, nutty, protein packed {28.7 grams to be exact}, pumpkin goodness. Whew! That was a mouthful!
There's so many delicious, good-for-you ingredients packed into this healthy Pumpkin Pitaya Smoothie Bowl I'm not sure I could leave any of them out. It's the perfect fall breakfast or snack, but who am I kidding? I'm eating it because it's pink.
Pumpkin Pitaya Smoothie Bowl
Ingredients
For the Smoothie:
- 1 pitaya smoothie pack in the frozen food section
- 1/3 cup pumpkin puree
- 1/2 cup nonfat Greek yogurt for Vegan or Paleo substitute coconut yogurt
- 2 tablespoons powdered peanut butter
- 1 teaspoon liquid stevia
For the Toppings:
Instructions
- To a blender or food processor, add all ingredients for the smoothie. Process until fully combined.
- Transfer the smoothie to a bowl or cup. Top with optional toppings. Go wild here and enjoy!

This is beautiful! I'd make it for the color alone. I just got my blender back from getting fixed and I'm pumpkin crazy, so it basically just looks like I need some pitaya.

I've always wanted to try Pitaya. If for no other reason than the color! I hated bows and frills and things as a girl. Still do. I also hated the color yellow and orange, but now they are kind of my power colors!
