Today is the scariest day of my life. As you're reading this, I'm either on my way to, in the process of or done having hip replacement surgery. It's still shocking and unbelievable that I, a healthy and active 38 year-old woman is going through something someone much older goes through.

The good news is my surgery is cutting edge, done from the front of the femur robotically. It's not the traditional hip replacement where they cut through mass amounts of muscle from behind and you're in the hospital for days.

Mine is much less invasive and it's outpatient with a much shorter recovery.

They're such an easy way to make a wholesome meal or to meal prep. It's just takes a little bit of planning to get the ingredients prepped ahead of time. Remember, plan to succeed not to fail!

What I love about this One Pan Chicken Brussels Sprouts & Butternut Squash is that it has all of my favorite fall flavors. Brussels sprouts, butternut squash and chicken sprinkled with nutmeg and thyme.

When you bake it, the veggies caramelize and the chicken juices drip onto the veggies making them more flavorful and packing them with warm, comforting fall spices.

Ingredients
 
 

  • 3 chicken breasts boneless, skinless
  • 1 pound brussels sprouts stems removed and sliced in half
  • 2 cups butternut squash cubed
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 350 degrees F. Prepare a baking sheet with cooking spray, oil or parchment paper.
  • Place chicken breasts in a mixing bowl pre-mixed with extra virgin olive oil, garlic, thyme, salt and pepper and coat with seasonings.
  • Place chicken breasts in the middle of the pan, then arrange the butternut squash on around the outside of the pan and sprinkle the brussels sprouts throughout the pan.
  • Spinkle Brussels sprouts and butternut squash with nutmeg, salt and pepper.
  • Bake at 350 degrees F 30 minutes until chicken is cooked and vegetables are tender. Remove from the oven, plate and devour!

    Sheet pan suppers are the best!!! Especially when you line the baking sheet with foil so that you barely have any dishes to wash at the end. 🙂

    Love the idea of adding nutmeg to season the chicken and veggies. It's great with savory dishes but I always forget to use it. Perfect for fall!
