Hi Friends! Hope you had a wonderful Thanksgiving. Ours was low key. We made dinner at my place. Grilled chicken turned out perfecto with a bunch of other traditional sides, lightened up of course.
Everyone enjoyed it. For fun, we made monkey bread from scratch. Talk about a sugar bomb. I'm already ready for the holidays to be over!
Yesterday I put a small turkey in the oven for me because it's just not Thanksgiving without turkey. Secretly, my solo turkey makes me happy because that means I'll have leftovers for days. No cooking! YEAH! More time for online shopping!
Now that I have leftover turkey, I'm thinking of different ways I can repurpose it into other meals like this Meal Prep Cranberry Turkey Sandwich, which is inspired by one I had in Wisconsin when my Mom had heart surgery a few years ago. It's only taken me 3 years to re-create it.
In full disclosure, their's had zucchini bread for the sandwich bread. I do love making zucchini bread, but it's a bit rich to me so I used regular gluten free bread from Northern Bakehouse. Any gluten free bread will do here. Sugar free pumpkin bread would also be amazing.
Then I loaded the sandwiches up with turkey, sprouts, no sugar added cranberry sauce and sliced green apples. The tart green apples pair so well with the naturally sweet cranberry sauce. A combination I know you'll be obsessed with!

Meal Prep Cranberry Turkey Sandwich
Ingredients
To Make 1 Sandwich
- 2 slices Gluten Free Bread I buy mine at Sprouts
- 3 ounces turkey breast or 3 slices of low sodium oven roasted deli turkey breast
- 1/4 cup no sugar added cranberry sauce
- 1 cup sprouts
- 1/4 cup green apples sliced
Instructions
- Assemble the sandwiches by placing sprouts on one slice of the gluten free bread, followed by turkey, cranberry sauce, sliced apples then place the remaining slice of bread on top.
- Note, you can spritz a little lemon juice on the apples to keep them from turning.
- Cut the sandwich in half then place in meal prep containers.
Notes
- Serve your sandwich with any leftover green vegetable (about 1 cup) you have on hand. I used green beans in the recipe which are not included in the nutritional data.
