It’s June! All my favorite summer eats are coming your way! One of the questions I get a lot is how to make summer meals quick and stress-free. I know, easier said than done right? Summer is a tricky time of year! Vacations, travel, activities means different routines and schedules and that throws many people off their game.

I get it. I used to over-complicate my meals too, which lead me to feeling defeated. I honestly thought my life would turn into eating granola bars, smoothies and subs. Haha. Thank goodness I’ve learned a few tricks in my 80 pound weight loss journey.

You can make a healthy meal in 30 minutes or less with it and believe me, I tried cooking a lot of ways. The Instant Pot is by far the easiest way I’ve found. Yes, it means having another appliance in your house but honestly, it will transform your summer meal prep.

This is one appliance you need to make your life easier!

How to make Instant Pot Chicken

Then you can make easy barbecue chicken in the instant pot! BBQ chicken is life in my house. I make it at least once a month and it pleases everyone – a versatile meal with delicious flavors and most importantly, it’s simple and easy!

Thanks to the Instant Pot you can make it under 30 minutes (the best slow cooker BBQ chicken recipe here!). It’s one of those meals where you set it and forget it for 30 minutes then come back to a ready to serve meal!

This simple chicken recipe is also low carb. The barbecue sauce has no added sugar. You can also buy lower sugar BBQ sauces. Condiments and dressing are always culprits for excess calories and added sugar. I always tell my weight loss clients, you can add sugar but you can’t take it away!

Expert Tips

Any BBQ sauce will work for this recipe, however, if you’re trying to keep it lower carb look for a BBQ sauce with no added sugar. Most BBQ sauces do have a TON of added sugar. You can purchase BBQ sauces with no added sugar (like Primal Kitchen) or you can make your own homemade barbecue sauce recipe and adjust the sugar to your liking.

Serve your Instant Pot Low Carb BBQ Chicken with sweet potatoes, cauliflower rice, over a salad, on a sandwich, and with brown rice, quinoa, or beans if not strictly Whole30 or Paleo. Lots of options here which makes it a great and EASY summer meal!

How much is a serving for this? I am trying to keep track of my food intake and I wanted to know if 1 serving is a cup or how many ounces for etc..

    1. Megan says:

About 1 cup would be a serving. It really depends on how much meat you use as finding exactly 1.25 pounds of meat at the store is not always realistic. If you want the exact amount, you could weigh the total amount after cooked then divide by 4 to get the grams/cups per serving. I simply divide the finished product in fourths by eye balling.

  2. Lindsay says:

I haven’t used the steam feature on my instant pot yet, does that help keep the chicken moist as opposed to the high pressure function? Thank you!

    1. Megan says:

My IP does not have a pressure function. The steam function works as the pressure function on your model so that is what you would use.

  3. Amanda says:

If I wanted to do this in the slow cooker, how long might you recommend cooking it for?

    1. Megan says:

The crockpot version is already linked for you in the blog post and in the recipe card. If you click one of those links, it will take you right to the slow cooker recipe version.
