Step 1: Prepare the Zucchini. Wash and slice your zucchinis, then place the ham and turkey on top.

Step 2: Bake and Add Cheese. Bake the boats at 425°F for 10 minutes. Then remove them from the oven and top each boat with cheddar cheese and broil for a couple minutes.

  • Don’t Remove the Pulp: For these zucchini boats, you don’t need to remove the pulp from the middle. Leave it intact and just cook the lunchmeat on the flat top of the zucchini.
  • Par Bake: Your zucchini may be a little hard after only baking for 10 minutes, so par-bake it before adding the lunchmeat to soften it. Par-bake means to bake for a few minutes, then cool and finish assembling before baking again.

No, the zucchini doesn’t freeze and thaw well and won’t be as appetizing, so I don’t recommend freezing them.

Healthy Zucchini Boats

These 3-ingredient healthy zucchini boats with lunchmeat and cheese are a great low-carb snack or lunch.

Ingredients 

  • 2 Zucchinis
  • 4 slices Turkey Lunchmeat
  • 4 slices Ham
  • ½ cup Cheddar Cheese

Instructions 

  • Preheat the oven to 425 F. Prepare a baking sheet with parchment paper.
  • Slice the ends off the zucchini (keep the skin on) then slice in half. Slice each half in half to make quarters. Top each zucchini boat with 1 slice of either the ham or turkey folding the lunchmeat in quarters.
  • Bake at 425 F for 10 minutes.
  • Remove from the oven then top each zucchini boat with 1/2 tbsp of cheddar cheese then broil for 3 minutes.
  • Remove from the oven and enjoy immediately.

Notes

  • Par-bake the zucchini for 5-10 minutes before adding the lunchmeat to soften the zucchini and make it easier to eat.
  • Season the zucchini with a little olive oil, salt, pepper, or a spice blend before assembling the boats and baking them. 
  • Cut a thin layer of zucchini off the bottom to create flat bottoms so your zucchini doesn’t roll around the baking sheet.
