I once had a friend who made pies all time. Every time I went to her house she had a freshly baked pie. It truly amazed me because pies are complicated! Not to be complicated with me though because yes, I am fully aware that I am complicated and proud of it!
But anyway, who has time to make a crust, bake a crust, then make the filling then bake the pie with the filling? Then after all that have the patience to wait hours for it to cool before digging in? Ugh..
Kudos to her, but this chick doesn't have that kind of time or patience for baking pies. I'm guessing you don't either.
Not to mention traditional pie recipes are high in sugar, fat and have empty non-nutritious calories that basically leave you hungry after the sugar high.
Well, I've got you covered with this Healthy Cinnamon Oat Apple Pie! Not only is this pie packed with heart healthy ingredients, it's also low in fat, sugar and calories. Made with whole grain, gluten free oats, eggs, cinnamon, and apples this Healthy Cinnamon Oat Apple Pie is one pie you can feel good about!
Let's checkout the ingredients.
Oats - Oats are high in beta-glucan, a fiber that's specifically known for lowering bad cholesterol. Not only do they improve digestion, but they have also been shown to be just as effective as taking medication for hypertension.
Some assume oats are high in carbs and avoid them for this reason, but they're actually an excellent food to eat as long as it's not the pre-packaged kind of oats.
Cinnamon - High in antioxidants that are protective of oxidative stress (think stress, chemical exposure, etc.). Not only is this the superfood of spices, it's excellent for naturally sweetening baked goods!
Apples - Apples are now thought to improve gut health because they feed large intestinal bacteria like a natural probiotic. While high in sugar, they're balanced with fiber in the skin which slows digestion of sugar. Hence, why it's important to eat them with the skin. Not to mention the skin is where all the nutrients are!
You'll notice in this recipe I didn't add much sugar. Between the apples and cinnamon, there's plenty of natural sugar to sweeten this pie. I left the skin on the apples to also retain more fiber and nutrients.
But aside from nerdy nutrition, the BEST part about this Healthy Cinnamon Oat Apple Pie (other than the fact that it is delicious) is that it's make in a skillet.
That means in than 30 minutes you have a thick and chewy pie bursting with sweet apples. A no fuss pie that's easy and nutritious. Perfect for breakfast or a healthy snack. Now that's my kind of pie!
Healthy Cinnamon Oat Apple Pie {GF, Low Cal}
Ingredients
- 8 egg whites
- 1 teaspoon vanilla extract
- 3/4 cup unsweetened almond milk
- 1 cup Gluten Free Oat Flour
- 2 tablespoons tapioca flour
- 1/8 cup Gluten Free rolled oats
- 2 tablespoons coconut sugar
- 1/4 tablespoon nutmeg
- 1 tablespoon cinnamon
- 1 small apple washed and sliced into thin wedges
- Optional add-ins: walnuts, almonds, raisins, other fresh fruit
Instructions
- Preheat oven 425 F. Prepare a small skillet or 9 inch round baking dish by greasing with a small amount of coconut or extra virgin olive oil.
- In a large mixing bowl, whisk together egg whites with milk, vanilla, nutmeg, cinnamon and sugar.
- In a separate small bowl, sift together tapioca flour, rolled oats and oat flour.
- Slowly fold the dry ingredients into the wet ingredients.
- Transfer the batter to the prepared skillet spreading evenly with a spatula.
- Gently place apple slices into the batter with your finger to form a ring.
- Bake at 425 F 20-25 minutes until pie has set and a toothpick can be removed from the center clean.
- Remove from the oven and cool in the skillet one hour at room temperature prior to serving.
- Serve with Greek yogurt or coconut cream for added protein and creaminess!

I do not measure any of the recipes in grams, only servings. There are 6 servings aka slices and each one 222 calories. You would have to measure the entire pie then measure each serving to get this information into grams.
I so love skillet cakes and I so love how low in sugar this one is! I'm gonna have to try this out with stevia for sure!

I'm not sure I understand the question. I whisked the eggs with the ingredients with a wire whisk. Same as I would if they were by themselves.
