egg whites

teaspoon
vanilla extract
3/4
cup
unsweetened almond milk

Gluten Free Oat Flour

tapioca flour

Gluten Free rolled oats

coconut sugar

nutmeg

small apple
washed and sliced into thin wedges

Instructions
Preheat oven 425 F. Prepare a
small skillet
or 9 inch round baking dish by greasing with a small amount of coconut or extra virgin olive oil.
In a
large mixing bowl
, whisk together egg whites with milk, vanilla, nutmeg, cinnamon and sugar.
In a separate small bowl, sift together tapioca flour, rolled oats and oat flour.
Slowly fold the dry ingredients into the wet ingredients.
Transfer the batter to the prepared skillet spreading evenly with a spatula.
Gently place apple slices into the batter with your finger to form a ring.
Bake at 425 F 20-25 minutes until pie has set and a toothpick can be removed from the center clean.
Remove from the oven and cool in the skillet one hour at room temperature prior to serving.
Serve with Greek yogurt or coconut cream for added protein and creaminess!
