  • Preheat oven 425 F. Prepare a small skillet or 9 inch round baking dish by greasing with a small amount of coconut or extra virgin olive oil.
  • In a large mixing bowl, whisk together egg whites with milk, vanilla, nutmeg, cinnamon and sugar.
  • In a separate small bowl, sift together tapioca flour, rolled oats and oat flour.
  • Slowly fold the dry ingredients into the wet ingredients.
  • Transfer the batter to the prepared skillet spreading evenly with a spatula.
  • Gently place apple slices into the batter with your finger to form a ring.
  • Bake at 425 F 20-25 minutes until pie has set and a toothpick can be removed from the center clean.
  • Remove from the oven and cool in the skillet one hour at room temperature prior to serving.
  • Serve with Greek yogurt or coconut cream for added protein and creaminess!
