Don't know what I'm talking about? Then you really should take a cruise back in time to cherish the raw strawberry cake, light Greek strawberry cheesecake bars, chocolate raspberries quinoa brownies and raspberry fudge you missed.
Oh, my! My mouth is watering just thinking about all those goodies.
So let's get back to basics and detox from all that fun summer party food, and a salad is just what you and I need for that!
This Greek Shrimp Salad was inspired by a Mediterranean cafe near my house. The food is always so fresh and amazing, and these days with the heat it's the perfect balance of light and filling.
So when I received my Sizzlefish shipment last month, I knew the shrimp was destined to become part of this Greek Shrimp Salad.
I've been on a mission to recreate this dish for a couple months, but haven't been able to get it quite right. There was something in the blend of seasonings in the dressing and salad that I just couldn't quite put my finger on.
Then finally, I cracked the code. Marjoram! That one itty bitty seasoning made all the difference in balancing the flavors and making them brighter.
I swear I should have a part time job cracking recipes from restaurants. But when you find something you really love, recreating it just seems like the right thing to do. Okay, maybe there's an ounce of curiosity there too. ;0)
So if you're looking for a light, refreshing and EASY meal, this Greek Shrimp Salad is it!
It's loaded with freshly chopped veggies, topped with grilled shrimp and a balsamic drizzle and seasoned to perfection. It's a healthy meal you can feel good about eating!
Greek Shrimp Salad {GF, Low Cal, Paleo}
Ingredients
For the Salad:
- 1/4 lb shrimp
- 3 cups romaine lettuce chopped
- 1/2 cup cucumber diced
- 1/4 cup grape tomatoes
- 1/2 cup green bell pepper diced
- 2 tablespoons feta cheese omito for Paleo
- 1/4 teaspoon marjoram
- 1/4 teaspoon basil
- 1/2 teaspoon oregano
- Salt & pepper to taste
For the Dressing:
- 1 tablespoon balsamic vinegar
- 1/2 tablespoon extra virgin olive oil
- 1/2 teaspoon marjoram
- 1/4 teaspoon basil
- 1/2 teaspoon oregano
- Salt & pepper to taste
Instructions
- In a small bowl, whisk together the ingredients for the dressing and set aside.
- Heat a grill pan over medium heat with cooking spray. Combine the salt and pepper and spices in a bowl and toss the shrimp in the bowl to coat. Place the shrimp on the grill pan. Cook 2-3 minutes on each side until opaque. Pro tip: remove shrimp 30 minutes from refrigerator prior to cooking.
- Remove shrimp from the grill and set aside to rest while you assemble the salad.
- Assemble the salad by adding all the vegetable ingredients first to a bowl. Next top with shrimp, feta and drizzle with dressing.
