Now I do realize it's bikini season but you have nothing to worry about. These desserts are packed with nourishing and healthy ingredients. I mean if you're gonna be bad, then you might as well do it right with good nutrients.
I have to admit, I'm a tiny bit envious of the treats you guys are getting lately. My doctor and I are doing an experiment right now. My stomach bloating has been an issue for almost a decade and will not get better. I've been able to narrow it down to anything with sugar. I know, that's really not that narrow. It could be anything.
So this means temporarily, at least I hope temporarily, I'm eliminating sugar to let my GI system detox. Then I will slowly add back foods and hopefully, find the culprit. This includes fruit, starchy vegetables, grains and sadly, brownies. 🙁
But not to worry! I will have you know, these Chocolate Raspberry Quinoa Brownies have been fully tested inside out by very trustworthy taste testers. And I may have had a bite of two myself, but we'll just keep that between me and you. Shh...don't tell my doctor!
Truthfully no testing was necessary for these Raspberry Quinoa Brownies. The recipe is based on the original double chocolate quinoa brownie recipe I posted last year. They're one of my all-time favorite brownies. Made flourless with almond butter and cooked quinoa, they're the thickest, creamiest brownies. You get chunks of chewy, chocolatey quinoa in every bite.
For this Raspberry Quinoa Brownie recipe, I added raspberries into the batter to give the brownies more flavor and depth. I like adding fresh fruit into batters because then it disperses them evenly throughout.
That way you're guaranteed to get sweet and tart raspberry and chocolate flavors in each and every bite. I will warn you though. These brownies are so darn good, you'll want to have someone to share them with, or give them to so you don't eat them all!
Chocolate Raspberry Quinoa Brownies {Vegan, GF, Low Cal}
Ingredients
- 1 1/2 cups quinoa cooked
- 1/2 cup cocoa powder
- 2 flax eggs 2 tbsp golden flaxseed meal + 6 tbsp water or 2 egg whites
- 1/4 cup coconut oil melted
- 3/4 cup almond butter
- 1/3 cup unsweetened applesauce
- 1/3 cup maple syrup
- 2 teaspoons almond extract
- 1/2 teaspoon sea salt
- 1 pint fresh raspberries
Instructions
- Prepare flax egg by combining flaxseed meal with water and sitting for 30 minutes
- Preheat oven to 350 degrees F. Prepare an 8-inch x 8-inch square baking pan with cooking spray or parchment paper.
- In a large bowl or standing mixer, combine all ingredients and mix well. Transfer the batter to the prepared baking dish.
- Bake 35-45 minutes until a toothpick can be removed clean from the center.
- Allow the brownies to cool in the pan 30 minutes before slicing into 16 squares.
- Store in a plastic container in the refrigerator to maintain freshness up to 10 days or in the freezer up to 60 days.

My stomach acts up when I have too much sugar for sure, but sometimes it's mysterious, as is everything with digestion I've found! I also notice my stomach is off when I'm making a lot of treats. That said a life completely without brownies makes me sad!

Agreed especially being a blogger! We're definitely getting closer to figuring it out. I have feeling it has to do with not eating fermented foods and yeast overgrowth which I'm sure you know about. I started drinking kombucha daily and suddenly my bloating has been a lot better. The real test will be when I start adding things back in.

I hope that you figure out your bloating issues sooner rather than later. A diet without fruit or sugar of any kind is no bueno!
