Remember when I said I couldn't wait for cooler weather? I will never say I want it to be cold again because my wish came true ten fold. It has been a high of 50's and low of 30's all week. They said on the news it's colder in Phoenix than Washington D.C.
It is just wrong and cruel to be that cold in the dessert. My fingers were so cold writing this post they were turning purple. I actually had to turn the heat on. I know...spoiled! So yeah, I've had enough of cold weather and ready for it to warm up now; at least into the 70's which is what is normal this time of year. Weather is crazy!
One nice thing about cold weather is I can once again use my oven without my house turning into a sauna. During the summer I use my crockpot a lot to keep the house cooler. It's nice to finally be able to turn it on without passing out from heat exhaustion. Yes, I'm being dramatic but if I couldn't turn on the oven, I wouldn't be able to bring you all the delicious holiday treats. And holiday treats are a must when it's cold outside!
Speaking of which, Christmas is exactly one week from today. How is it that possible? I can't even comprehend where this year has gone.
Mom's even coming back this weekend. She left last month after being here several months caring for me after the car accident. I feel like she just left and now she's back already. Time flies and weather is crazy!
Can we all just agree that Christmas should be two months not one? I feel like the month of December zips by too fast.
By the time I have a moment to sit down, savor in its joy and meaning, it's over with. Whoever organizes the calendars, the holidays need to be extended! We need more time to enjoy the holidays and eat ALL THE GOODIES!
Because time is not always on our side, allow me to introduce you to this Ginger Spiced Candied Pecans & Peptias recipe. The time of year can be tricky to get healthy snacks and treats made in time for the holidays. Plus let's face it, there's already a plethora of unhealthy stuff everywhere.
This recipe is an easy one with simple and healthy ingredients that you'll love. It even go a thumbs up from Mom.
This makes a versatile snack you can eat solo or top yogurt or pancakes with. If you really want to get fancy, sprinkle these candied nuts on a pumpkin pie.
Everyone will think you spent hours baking a gourmet pie! You can even wrap some as a last minute gift. I would never say no to food, would you? Happy baking!
Ginger Spiced Candied Pecans & Pepitas
Ingredients
Instructions
- Preheat oven to 250 F. Prepare a large baking sheet with parchment paper.
- In a large mixing bowl, whisk together the egg whites until frothy. Add the pecans and pumpkin seeds.
- In a separate smaller mixing bowl, combine the seasonings and sugar then pour the sugar and spice mixture over the nuts and combine well.
- Pour the nuts onto the baking sheet and spread out and into an even layer.
- Bake 45 minutes then remove from the oven and cool 1 hour.
- Remove from the baking sheet then store in the refrigerator in an airtight container. Store up to 7 days.

You need the eggs as a binder for this recipe. I haven't tried any substitutions. You could try an egg replacer.

I am also a fan of being able to use the oven in cooler weather. Just can't do it when it's sweltering outside. I might go ahead and vote to make Christmas 2 months except for that I work in a hospital and typically work through the holidays. I used to work for a school system, though, and holidays were awesome! Hope you have a great weekend 🙂
