Oh, Monday. You and I really need to talk.
I apologize if you've been having trouble with my website. It's giving me problems on the back end too so I definitely feel your pain. There's been server problems for a week which seems to be malware related (aka someone's trying to hack my site).
I worked on it over weekend with my web host. They're still running scans to figure things out and cleanup whatever's causing this.
Ugh...I really hate when technical problems happen. It just makes me want to pull my hair out.
Why can't things just magically work? I did not sign up for this when I started blogging. Hang with me as we work through this and thank you for your patience!
Between the intense desert heat and website frustrations, keeping my cool this weekend was a big challenge which is how this Chocolate Cherry Coconut Ice Cream came to be.
It was one of those moments when I could have very easily made an unhealthy decision. You know when you're standing in front of the pantry weighing your options. I can't tell you how many times a bag of chips or pint of Ben & Jerry have left me feeling bloated and more miserable.
I knew if I made an unhealthy choice, I'd feel worst so I opted for 3 ingredient Chocolate Cherry Coconut Ice Cream. Yes, you heard me right! Just 3 ingredients, a blender and less than 5 minutes was all it took to make a naturally sweet, healthy and satisfying snack.
I don't know what it is, but there's just something so deliciously amazing about sweet chocolate mixed with tart cherries. It's dessert without the dessert. A thick and creamy cool snack you can enjoy guilt-free and without the stomach ache.
Chocolate Cherry Coconut Ice Cream
Ingredients
- 1 cup cherries frozen
- 1/2 cup unsweetened coconut cream pre-chilled, or dairy-free milk of choice
- 1/2 tablespoon cocoa powder unsweetened
- Optional: stevia for added sweetness, coconut flakes & chocolate chips for topping
Instructions
- Place all ingredients in a blender and blend until smooth. Transfer to a bowl, top with optional add-ins and devour!

Don't you feel like there should be a service that fixes these things for a reasonable cost? All the things I've looked at are super expensive.

Totally feel you on the tech issues - I just migrated to a new server/host over the weekend and so far my back end issues seem better, but time will tell. The guy I was working with couldn't figure out what my problem was so I'm really hoping it wasn't more beyond the server. These tech issues can seriously make my heart stop!

Crossing my fingers for you! Your site seems better. A lot of it is ad networks. I've tried getting my ad networks to reduce the scripts they run. They did do some things, but not enough so I took many of them down.
