Monday! Why do you always come so soon? I want a weekend redux. This weekend was particularly nice in Arizona with its unusual cloud cover and rainy weather.

Yesterday I went for a 5 mile walk and it poured on me. I didn't care though. I was just thankful I had a day I could walk pain free since the accident last year.

So yes, I want a weekend redux so I can have another one of those good days. And just like some days need a redux, some recipes deserve a redux too like these Almond Chia Hemp Flax Bars!

These bars are absolutely delicious, and it would be a shame to not show them off to the world again with pictures that look appetizing.

They're no bake which means after blending in a food processor or blender for a few minutes you've got finger-licking good granola bars.

Ingredients
 
 

  • 1 cup Gluten Free rolled oats
  • 1 cup almonds raw
  • 15-18 dates
  • 2 tablespoons flax meal
  • 1 tablespoon hemp seeds
  • 2 tablespoons chia seeds
  • 1/2 cup shredded coconut flakes unsweetened
  • 1/2 teaspoon sea salt
  • 1/4 cup coconut oil melted
  • 1/2 teaspoon almond extract
  • 2 tablespoons mini chocolate chips dairy free

Instructions
 

  • In a food processor layer dates, almond and oats. Pulse the blender several times until finely chopped.
  • To the mixture, add coconut oil, salt, almond extract, flax meal, hemp, chia and coconut flakes. Blend on high until a sticky mixture forms. If a sticky mixture doesn't form, add more dates, one at a time, until it does.
  • Remove the mixture from the blender and transfer to a small mixing bowl. Add chocolate chips to the bowl and stir until dispersed throughout the batter.
  • Prepare an 8-inch x 8-inch square baking dish by criss-crossing parchment paper allowing it to hang over the edges of the baking dish for easy removal.
  • Transfer the mixture to the baking dish, pressing it firmly into the pan to flatten and even it out.
  • Refrigerate the bars overnight. In the morning, remove the bars from the baking dish by lifting the sides of the parchment paper up. Cut into 16 bars with a pizza cutter or large sharp knife.
  • Store bars in the refrigerator up to a week or in the freezer up to one month.

    Absolutely delicious! Used the Vitamix, 1 cup of dates, substituted roasted peanuts and vanilla extract (2 tsp).

    These look so delicious. I've been making date based bars for years but have never considering adding oats and I've also never tried hemp hearts and am seeing them in a lot of great recipes lately. Can wait to try this. I pinned it AND printed it!

      You need something that would make them stick together. Any dried fruit like raisins or figs would work, but if they're too high GI for you then I'd try nut butter. Just be sure it has no added sugar, only nuts in the ingredients. There is also a low glycemic sugar alternative called Dolcedi' made from apples. You could try using it or applesauce with a little protein powder and baking the bars at low temp like 300 F for 15-18 minutes. I haven't tried any of these, but those are some things you could try.

    Do you have a suggestion to replace the figs? I am trying to keep my Blood Sugar low and figs aren't recommended for me to eat..

    Ooh wow, homemade granola bars are my favorite! I love crunchy/sweet oaty bars and making them is so fun. And that makes me so happy that you were able to go for an amazing walk in the rain with no pain. <3 THAT is so awesome!

    Mmmm so much superfood goodness in this recipe! Absolutely love it 🙂 I'm a huge fan of making granola bars/energy bites at home. Who needs to pay $5 for something you could make SO much cheaper [and quite frankly, tastes better!] at home! Great recipe girl!
