I was about to apologize for the iPhone pictures of this healthy hummus. That is, if you happened to have been around in 2015 following this blog. Wow! Has it really been that long? It feels like yesterday that I started building my little area of the internet world.

I’ve thought about it and I’m not going to apologize for old recipe pictures anymore. Here’s why… we all have to start somewhere. That means we’re going to fail, learn, fail, learn. Get it? That’s the only way we grow, reach our goals and do great things.

Had I not started this blog with ugly iPhone pictures, it would not be what it is today and I wouldn’t have my website and nutrition business (which I LOVE and adore). The point is, we all have to start somewhere and the path won’t always be a straight line and clear.

Why am I telling you this? Because way too many women think think they need to be perfect to reach their weight loss goals. I see it everyday in my practice. Sun Dried Tomato Red Pepper Hummus

Ever since I made that no bean hummus, I’ve been obsessed with making zucchini based dips and marinades for a lighter, veggie packed hummus or cooking protein in.

I’m not in any way telling you to omit beans. They’re high fiber and a wonderful source of nutrients. Not to mention fiber is key for weight loss. So many misconception when it comes to carbs which I talk about in my free online training.

One of my goals is to alway eat more veggies. This hummus is made from red peppers, zucchini and sun dried tomatoes. Three veggies in one, delicious, creamy and slightly hummus coming right up!

What You Need

  • Red Pepper
  • Sun Dried Tomatoes
  • Zucchini
  • Tahini
  • Olive oil
  • Lemon Juice
  • Paprika, Cayenne Pepper, Salt

How to make healthy hummus

Wash, clean, cut and discard the seeds of the red pepper and peel the zucchini. Roughly chop both and toss in a blender or food processor. You can leave the skin on the zucchini if you like. More good fiber in that skin, but it’s totally up to you!

Measure and toss the remaining ingredients into the blender. Blend until smooth and enjoy!

How to eat this low carb hummus

There’e soooo many options when it comes to hummus. While you can enjoy it with raw veggies, I encourage you to think beyond that. Hummus can be used as a salad dressing, protein marinade like this hummus chicken or even as a low carb pasta sauce.

Ingredients

  • 1 zucchini peeled and chopped into 1 inch pieces
  • 1 red bell pepper chopped, seeded and cut into 1 inch pieces
  • 2 garlic cloves
  • 1/4 cup sun dried tomatoes
  • 1/4 cup lemon juice
  • 1 tbsp extra virgin olive oil
  • 1/2 cup tahini
  • 1/4 tsp cayenne pepper
  • 1/4 tsp paprika
  • 1/2 tsp sea salt
US Customary - Metric

Instructions

  1. Toss all ingredients in a food processor or blender. Blend until smooth. Place in a bowl and serve with your favorite veggies.

  2. Store in the refrigerator up to 10 days in a sealed container.

  • Makes 12 servings, about 2 tbsp each depending on the size of your veggies.

    NO WAY – I can’t tell you how excited I am to learn about bean free hummus! I am pretty allergic to FODMAP food (beans and garlic included) so I just can’t do both at the same time. One at a time, much better! I can’t wait to give this a shot. You’re a genius!

    I totally forgot about zucchini hummus! I had an ex that used to make a version of this all the time. I’m not trying to be paleo, but these low carb things are amazingly helpful when you’re on a competition diet.

    Hope you get this stuff worked out once and for all! And I really hope you’re not driving around in the Super Bowl mess this weekend.

    I have read many stories on how food has cured autoimmune disease so I wouldn’t be surprised if it could balance hormones too. I love garlic, sun-dried tomatoes and basil..I guess I just like hummus too much 😉

    You know what I never thought about how losing weight would affect my hormones. It makes sense though. Two years ago I lost about 20 pounds due to training for a triathlon and stress. It completely turned my hormones upside down. At the time we were trying to have a baby and it was not possible since I was all screwed up. Very interesting…

      Hormones can mess with everything in your body…even your bones. I did everything the right way too. Didn’t do any weird diets, just watched my portions and walked everyday. Apparently my body is also very sensitive to stress. Did you do anything to turn yours around? It helps knowing I’m not alone.
