Oh hey, muffins. Where've you been?  😉

As you can tell, I decided this weekend I N-E-E-D-E-D muffins especially after powering through last week's homework madness and some unexpected life messes too.

It started 4th of July when I was slammed with a cold and succumbed to the couch all weekend. Only I get sick when it's 110 degrees out. Getting sick in the summer is just wrong. My immune system better be rock solid after this. Thankfully, it was short lived.

Wanna know my trick for knocking it out so fast? Working out. I know it sounds strange, but trust me. Every time I get sick i.e. no fever, I do light workouts (nothing crazy here) just to get the blood and sinus flowing. It forces the gunk out of me in a few days. Working out really is a miracle pill.

Thanks to mister sniffles I was off my game last week then things got so much better when I got up one morning and somehow caught my good leg on the side of the bed. Not like I need more injuries here!

It didn't hurt and there wasn't much blood so I figured no big deal and went about my day. After I taught spin class, it started bleeding. There was actually blood running down my leg. Later that night the pain came on. Now I'm sporting a huge sexy bruise and scar. Now wonder I can't get a boyfriend.

After feeling like an old lady taken down by a simple cold and fall, I drowned my gimpy sorrows in baking. So I guess you could say one woman's bad luck is another one's prize, and these lovely Strawberry Grape Muffins are your prize.

They're moist, decadent, creamy and SUGAR FREE muffins. OMG...say what? Yep! These Strawberry Grape Muffins are naturally sweetened with fruit only. No additives, no extra sugar, no preservatives, no natural flavors, no nada. Just real whole food.

They're also only 115 calories! I'd say for that you could have at least two. Yes? And while you're baking your Strawberry Grape Muffins, you can make grape popsicles with your extra grapes. That's how you make snacking easy!

Ingredients
  

  • 1 cup Gluten Free 1 to 1 baking flour or oat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut oil
  • 1/2 cup grapes diced
  • 1/2 cup strawberries diced

Instructions
 

  • Preheat oven to 350 F. Prepare a muffin tin with muffin liners or cooking spray.
  • In a large bowl, combine applesauce and coconut oil. In a separate smaller bowl, combine flour, salt and baking soda. Gently fold the flour mixture into the wet mixture.
  • Add the diced grapes and strawberries to the batter and gently fold them in. Add the batter to the muffin cavities dividing it evenly. 
  • Bake 18 minutes at 350 F. Remove from the oven and allow muffins to cool in the muffin tin 5-10 minutes before removing. Store in the refrigerator or freezer to maintain freshness.

      It is better! Large bruise and lost some feeling in the tibia. Yeah, I kind of accident prone.

    I am convinced that a light workout cures any (not TOO terrible) hangover! In college, I would hop on the elliptical with a trashy magazine and a huge bottle of water after a long night and just sweat it out.

    LOVE the addition of grapes to these muffins! I totally agree on the strawberry - I just used "melted" frozen strawberries (pureed, basically) to sweeten my coconut flour egg white muffins. They make them taste like a real, decadent cake!

    Oh my gosh I totally did that the other day! Huge bruise on my leg as a battle scar against my bed post! I'm with you though sometimes we need muffins in our life it's a fact! I've never tried grapes in muffins before! Yum!
