Happy Caesar Salad Monday! Is that a thing? Well if it isn't we're making it a thing today friends! Healthy, lower fat, more filling version coming right up.
It's been a killer summer in Arizona this year with record 110 days and no rain. Summer is our rainy season which usually keeps the temperatures lower. Nope. Not this summer! So, I've been living off salads, fresh vegetables and easy meals to survive.
It's all about simplicity when you're in survival mode. Most women use overwhelm and stress as an excuse to eat unhealthy foods but truthfully, it's just as easy to eat healthy as unhealthy. You just have to think outside the box.
Like Caesar salad...it's a classic salad that's higher in calories and fat that's EASY to turn into a healthy and tasty meal. Let me show you how!

This healthier Caesar Salad has a Mexican flare! It's more interesting and has more flavor. Black beans, grape tomatoes and bell pepper with romaine and kale give this salad more protein, less fat, more bulk (aka veggies). A recipe for healthy and tasty!
Paired with a 5-minute homemade Greek yogurt Caesar dressing, it's got all the flavor your need and the best part is it's EASY.
What You Need
- Romaine Lettuce
- Kale
- Black Beans
- Grape Tomatoes
- Bell Pepper
- Homemade Caesar Dressing
Helpful Tips
Customize it and make it your own. Don't like black beans? Swap it for lentils or quinoa. Need more protein? Add chicken breast, lean beef or shrimp! Need more spice? Add jalapeños, hot peppers or salsa to up the heat.

Ingredients
- 1 cup romaine lettuce shredded
- 1 cup kale de-stemmed
- 1/2 yellow bell pepper sliced
- 1/4 cup grape tomatoes
- 1/4 cup black beans
- 1/4 homemade Caesar dressing of the recipe
Instructions
- In a bowl, toss the romaine and kale lettuce together.
- Top with black beans, bell peppers, grape tomatoes, Caesar dressing and black pepper. Serve immediately!
