Low Calorie Caesar Salad! A classic salad made healthier with creamy Greek yogurt Caesar dressing and a blend of kale and romaine lettuce. Topped with black beans and bell peppers for a southwestern flare!

South Of The Border Caesar Salad! A classic salad made healthier with homemade Caesar dressing and a blend of kale and romaine lettuce. Topped with black beans and bell peppers for a Mexican flare. Gluten Free + Low Calorie

I love a classic caesar salad, but they're aren't the healthiest salads and can be quite calorically dense. This healthy caesar salad is lighter alternative and I've paired it with my low fat caesar dressing recipe that's higher protein, tangy and creamy!

I've served this caesar salad as a main meal topped with my easy shredded chicken recipe and bagel chicken, as a side salad for a BBQ or wrapped in a high fiber tortilla as a caesar wrap.

Why You'll Love This Easy Caesar Salad

  • Nutrient Packed: It includes wholesome ingredients and can be easily adapted to your liking. I used kale, bell peppers, tomatoes and black beans to add more nutrients to this classic caesar salad recipe. You can use any lettuce or veggies with this recipe to make it to your own preference!
  • Lighter Caesar Dressing: A lighter, low calorie caesar salad dressing recipe brings together the classic flavors of a caesar dressing with a healthier twist and lightening up the calories using Greek yogurt instead of mayonnaise.
  • Customizable: You can personalize this healthy caesar salad. Add grilled shrimp, tofu, beans, oven baked halibut, swap for romaine or another lettuce. Experiment as you wish - you can't mess it up!

Expert Tips

  • Soak the lettuce in a large bowl of cold water with ice cubes for 10 minutes to make it extra crisp
  • Buy a block of parmesan cheese and grate if yourself. A healthy caesar salad always tastes better with freshly grated cheese!
  • Make homemade croutons to place on top.
  • Add a protein like beans, lentils, tempeh, easy healthy baked salmon or garlic lemon shrimp to make it a complete and filling meal.
