It’s Friday! Let’s eat cookies!!! Who’s with me? And these aren’t just any cookies friends. These are soft and chewy, cinnamon, coconut laced Quinoa Cookies that no joke melt-in-your-mouth. They’re so scrumptiously delicious it’s hard to resist eating the entire batch.
You know I forgot about these cookies. Wait, did I mention they’re phenomenal? Because they are! You may want to preheat the oven now.
I made these in June to bring on my trip to Chicago. Two days before my trip I realized, “oh crap! I didn’t bake anything.” I was visiting friends and always like to bring the kids a little something special since I’m basically hijacking their Mom for the weekend. Plus if they’re healthy the parents really can’t say no. See, I got parents figured out. Haha.
So I took to the kitchen last minute, all frazzled (with flour in my hair), tossed in a little of this and a little of that, put it in the oven and prayed the baking Gods would make it work and in this case, it did! Magical Quinoa Cookies came out of the oven smelling irresistible.
As soon as I tasted one, it was game over. I could not stop eating them. I ate so many I had to make another batch. Oops!
The unfortunate part was that despite my best efforts wrapping them in bubble wrap, a few got dismantled en route. My friend laughed at me for wrapping cookies in bubble wrap. Hey, at least I tried! How else are you supposed to transport cookies?
Fortunately, no one minded the broken cookies. They were so good they were fighting for crumbs. The morning they dropped me off at the airport, their oldest daughter, Ava kept shouting from the car “remember to send the cookie recipe.”
I’m taking that as a sign that quinoa cookies were a success even if I am a bad “aunt” for forgetting. Technically I did remember, just a little late. Getting old sucks. 🙁
These Quinoa Cookies remind me of a Girl Scout cookie. I couldn’t tell you which one. It’s been awhile since I’ve been a Girl Scout so I’ll leave that investigation to you because you will surely want to make these. If I could get an 8 year old to love them, I’m sure you will too!

In a small bowl, sift together flour, shredded coconut, cinnamon and baking powder.
In another larger bowl, mix together egg whites, vanilla and sugar. Slowly fold in the flour mixture.
Last stir in the coconut oil and quinoa (adding the oil in last prevents it from hardening).
Drop 2 heaping tablespoons of batter onto the baking sheet to form a cookie. Repeat until all the batter is gone.
Bake 10-12 minutes until cookies are slightly browned around the edges.
Remove from the oven and allow to cool 5 minutes on the baking sheet before gently removing and transferring to a cooling rack. These are delicate cookies so use a sturdy spatula to remove them.
