I love a healthy soup recipe! Soups are a great meal - they're comforting and packed with protein and vegetables.

Soups are an easy way to eat healthy and lower calorie because they fill you up, keep hunger satisfied and leave you energized!

This low calorie healthy hamburger soup recipe is easy to make in a slow cooker, includes 9 vegetables and has the most flavorful tomato broth!

This healthy ground beef soup is one you will want to cozy up to on a cold day and I know it will soon be a family favorite!

What Makes This Ground Beef Vegetable Soup Healthy?

  • Easy To Make - This healthy soup recipe only requires one pot and it couldn't be an easier to make!
  • Higher Protein - This hamburger soup recipe has 25 grams of protein per serving. Most people are not getting sufficient lean protein in their meals which leaves them hungrier and reaching for higher calorie snacks. Adequate protein is very important not only for fat loss, but also for a healthy, balanced diet.
  • Lower Calorie - This hamburger soup recipe has 297 calories per serving. Each serving is about 1 3/4 cups.

  • Extra Virgin Olive Oil
  • Lean Ground Beef (I used ButcherBox grass-fed, grass-finished ground beef)
  • White Onion
  • Bell Pepper
  • Garlic Cloves
  • Sweet Potato (yam)
  • Yukon Gold Potatoes
  • Carrots
  • Celery
  • Fire-Roasted Tomatoes
  • Tomato Paste
  • Beef Broth, low sodium
  • Italian Seasoning
  • Green Beans
  • Kale
  • Salt, Pepper

How To Make A Vegetable Soup with Hamburger Meat

Here's the steps for making beef soup with vegetables in a slow cooker. Scroll to the bottom to see the recipe card with full instructions.

You can also make this in the stovetop and Instant Pot. Instructions are below!

Step One - Ground the meat in a skillet with the olive oil, onion, bell pepper and garlic. Cook until the ground meat is no longer pink.

Step Two - Drain the meat mixture then place in a slow cooker. Add the remaining ingredients to the crockpot except the green beans and kale.

Step Three - Cover and cook on low 6-8 hours or on high 4-6 hours.

Step Four - When there is one hour left to cook, add and stir-in the green beans and kale. Cover and cook for the remaining hour, or until the green beans are tender.

Step Five - Remove the cover, taste and season more as needed. Serve warm with chopped parsley and grated parmesan on top.

Can You Make Ground Beef Vegetable Soup In The Instant Pot

Yes, you can make hamburger soup recipe in the Instant Pot. The Instant Pot is one of my favorite ways to make soup recipes.

Start by browning the ground beef and vegetables in the Instant Pot on the sauté function. Drain the meat once it is no longer pink, then return it to the Instant Pot.

Add the remaining ingredients for the hamburger soup recipe except the green beans and kale. Cover and set the valve to sealing. Set the Instant Pot to pressure cook 30 minutes.

Once the pot beeps, move the valve to release and let the steam out. Remove the cover carefully after the steam has released. Stir in the kale and green beans. Let the soup sit 10 minutes for the green beans to cook.

Serve warm with chopped parsley and grated parmesan!

Can You Make Vegetable Soup With Ground Beef On The Stovetop

You can make healthy hamburger soup recipe on the stovetop as well. You will need a large pot!

Start by browning the ground meat with the vegetables over medium heat. When the beef is cooked and no longer pink, drain and return to the pot.

Add the remaining ingredients to the pot except for the green beans and kale. Cover and bring the pot to a boil. Once the pot is boiling, reduce to a medium simmer and simmer for 30 minutes covered.

Remove the cover and add the green beans and kale. Stir the pot and let it cook another 10 minutes or until the green beans are cooked.

Serve warm with chopped parsley and grated parmesan.

What To Serve With Vegetable with Ground Beef

Hamburger soup recipe is filling on it's own, but here are options for serving with your soup.

How To Store Vegetable Soup with Hamburger Meat

  • Refrigerator - This ground beef soup will last in the refrigerator up to 5 days in an airtight container.
  • Freezer - Can you freeze vegetable beef soup with hamburger? Yes! Hamburger soup can be frozen up to 3 months in an airtight container.
  • Reheating - You can reheat this recipe on the stovetop or in the microwave. When removing from the freezer, thaw first by placing in the refrigerator overnight then reheat.

Substitutions For Healthy Hamburger Soup Recipe

Here are the substitutions I recommend for this low calorie beef vegetable soup recipe. Remember when you make substitutions it does change the nutritional values you see in the recipe card below.

  • Extra Virgin Olive Oil - You can use avocado oil instead or a cooking you prefer.
  • Lean Ground Beef - Lean ground turkey, ground chicken or ground pork can be substituted.
  • Beef Broth - I used low sodium beef broth for this recipe. Any broth or stock can be used in place of it. You can also use low sodium or no sodium.
  • Vegetables - This recipe is versatile so feel free to omit or replace the vegetables to make the recipe work for you!
  • Fire-Roasted Tomatoes - Petite diced tomatoes, diced tomatoes, crushed tomatoes or tomato sauce can be used instead.
  • Parmesan - The cheese is what really brightens up the flavor of this hamburger soup recipe. I do not recommend omitting it, but if you are dairy-free you could try nutritional yeast or a dairy-free cheese option.
  • Vegetarian - To make hamburger soup recipe vegetarian you can use a vegetarian ground meat alternative or use lentils instead, use vegetable broth and omit the parmesan for serving.
  • Italian Seasoning - You can use the individual spices used in Italian seasoning which are oregano, basil, rosemary, thyme and marjoram. You can omit or add additional spices to the recipe as you like.

Ingredients
 
 

  • 2 teaspoons Extra Virgin Olive Oil
  • 1 lb Lean Ground Beef
  • 1/2 cup White Onion diced
  • 1 Green Bell Pepper diced
  • 4 Garlic Cloves minced
  • 2/3 cup Sweet Potato or 1 small yam, peeled and diced
  • 3 Yukon Gold Potatoes peeled and diced
  • 1/3 cup Carrots diced
  • 1/3 cup Celery diced
  • 28 oz Fire-Roasted Tomatoes with juices
  • 6 oz Tomato Paste
  • 4 cups Beef Broth low sodium
  • 2 tablespoons Italian Seasoning
  • 8 oz Green Beans cut into 1-inch pieces
  • 2 cups Kale packed and roughly chopped
  • Salt and Pepper to taste
  • Parsley and Parmesan for serving (optional)

Instructions
 

Crockpot Healthy Hamburger Soup Instructions

  • Add the oil to a large skillet and bring to medium heat. Add the ground beef, onion, green pepper, and garlic. Cook and stir until the ground beef is cooked and no longer pink 3-4 minutes.
  • Drain the beef mixture and transfer it to a slow cooker. Add the remaining ingredients, except for the green beans and kale. 
  • Cover and cook on low 6-8 hours or on high side 4-6 hours.
  • When there is 1 hour of cooking remaining, add and stir-in the green beans and kale. Cover and cook for the remaining 1 hour, or until the green beans are tender. If you are using frozen green beans, it may take longer to cook depending on your slow cooker.
  • Taste to season more if needed, serve with chopped parsley and a sprinkle of parmesan.

Instant Pot Healthy Hamburger Soup Instructions

  • Brown the ground beef, oil, green bell pepper and garlic in the Instant Pot on the sauté function. Drain the meat once it is no longer pink, then return it to the Instant Pot.
  • Add the remaining ingredients for the hamburger soup recipe to the Instant Pot except the green beans and kale. Cover the pot and set the valve to sealing. Set the Instant Pot to pressure cook 30 minutes.
  • Once the pot beeps, move the valve to release and let the steam out. Remove the cover carefully after the steam has released. Stir in the kale and green beans. Let the soup sit 10 minutes for the green beans to cook.
  • Taste to season more if needed, serve with chopped parsley and a sprinkle of parmesan.

Stovetop Healthy Hamburger Soup Instructions

  • Brown the ground beef, oil, green bell pepper and garlic in a large pot over medium heat. Drain the meat once it is no longer pink, then return it to the pot.
  • Add the remaining ingredients to the pot except for the green beans and kale. Cover and bring the pot to a boil. Once the pot is boiling, reduce to a medium simmer and simmer for 30 minutes covered. 
  • Remove the cover and add the green beans and kale. Stir the pot and let it cook another 10 minutes or until the green beans are cooked.
  • Taste to season more if needed, serve with chopped parsley and a sprinkle of parmesan.

  • This recipe makes 6 servings - each serving is approximately 1 3/4 cups.
