Simple Cashew Salad

Mayo free chicken salad sign me up! This chicken salad replaces mayo with Greek yogurt to keep the calories lower while not sacrificing on flavor or taste. Greek yogurt is also higher in protein making an easy substitute.

If you enjoy mayo, you can certainly use it in this recipe and also, be aware of how much fat you’re eating. Fat is good for you, but it’s very easy to eat too much fat.

Not only is this chicken salad mayo free, but it’s loaded with veggies and Asian inspired flavors. I know sounds strange, but you have to trust me on this!

Ingredients for Cashew Crunch Salad

  • Shredded chicken breast (canned, Rotisserie or made in the Instant Pot)
  • Greek yogurt
  • Apple Cider Vinegar
  • Red Bell Pepper
  • Red Cabbage
  • Kale
  • Raw Cashews

How to Serve Chicken Salad

  • Greens – My favorite way is over a large amount of kale or mixed greens. It’s a light meal, but the veggies and protein guarantee you’ll stay full longer.
  • Sweet Potato – Served over a half of a roasted sweet potato is so delicious!
  • Gluten Free Wrap or Tortilla – There are many gluten free options out there for wraps and tortilla. I recommend you look for one with less added sugar and more fiber!

  • Mix the Greek yogurt, coconut aminos and rice wine vinegar together in a large mixing bowl then stir in the remaining ingredients.
  • Divide the mixture into four servings and serve over greens, in a tortilla wrap or on a gluten free bun.
