Before my Instant Pot, I made shredded chicken in my slow cooker. The only problem is that doesn’t work when you’re in a jam for time. Also, with the Instant Pot you can cook chicken frozen. Life changing!

Ingredients

  • 1.25 lbs chicken breasts about 4 chicken breasts
  • 1 cup chicken broth or water
  • 1/2 tbsp garlic powder
  • 1.5 tsp cumin
  • 1 tsp oregano
  • 1/2 tbsp chili powder
  • salt and pepper to taste

Instructions

  1. Place all ingredients in an Instant Pot. Close the lid and set valve to sealing. Set to "protein" or "pressure cook" and set to 20 minutes.

  2. Release the pressure by turning the valve to "release" then remove the lid once the steam has stopped coming out of the valve.

  3. Using two forks, shed the chicken. Transfer to meal prep containers or store in the fridge for easy lunches or weeknight meals.

  • 1 serving is about 1 cup.
  • To make shredded chicken in a slow cooker, follow the recipe in this post.
