You guys know how much I LOVE to meal prep. Having a healthy meal plan is key to getting started with meal prepping. It helps me stay on track with my goals. I find when I don't have that plan, I eat whatever whenever. Sound familiar? That's why I love my weight loss meal plans because it's like no other meal plans.

Before my Instant Pot, I made shredded chicken in my slow cooker. The only problem is that doesn't work when you're in a jam for time. Also, with the Instant Pot you can cook chicken frozen. Life changing!

Instant Pot Low Calorie Chicken

Ingredients
 
 

  • 1 1/4 lb chicken breasts about 4 chicken breasts
  • 1 cup chicken broth or water
  • 1/2 tablespoon garlic powder
  • 1 1/2 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 tablespoon chili powder
  • Salt and pepper to taste

Instructions
 

  • Place all ingredients in an Instant Pot. Close the lid and set valve to sealing. Set to "protein" or "pressure cook" and set to 20 minutes.
  • Release the pressure by turning the valve to "release" then remove the lid once the steam has stopped coming out of the valve.
  • Using two forks, shed the chicken. Transfer to meal prep containers or store in the fridge for easy lunches or weeknight meals.

Notes

  • 1 serving is about 1 cup.
  • To make shredded chicken in a slow cooker, follow the recipe in this post.
