Before my Instant Pot, I made shredded chicken in my slow cooker. The only problem is that doesn't work when you're in a jam for time. Also, with the Instant Pot you can cook chicken frozen. Life changing!

Instant Pot Shredded Chicken
Ingredients
- 1 1/4 lb chicken breasts about 4 chicken breasts
- 1 cup chicken broth or water
- 1/2 tablespoon garlic powder
- 1 1/2 teaspoon cumin
- 1 teaspoon oregano
- 1/2 tablespoon chili powder
- Salt and pepper to taste
Instructions
- Place all ingredients in an Instant Pot. Close the lid and set valve to sealing. Set to "protein" or "pressure cook" and set to 20 minutes.
- Release the pressure by turning the valve to "release" then remove the lid once the steam has stopped coming out of the valve.
- Using two forks, shed the chicken. Transfer to meal prep containers or store in the fridge for easy lunches or weeknight meals.
Notes
- 1 serving is about 1 cup.
