But… this hummus made with edamame can be used for so very much more than dipping. I lather it on homemade pizzas, sandwiches, salads and even baked it on chicken as a marinade is seriously the best!

How to Make Edamame Dip

Toss it in a blender or food processor and blend until smooth and it’s done. That’s the beauty of this easy recipe! Only 2 minutes to make it!

This dip recipe is thicker than traditional hummus made with chickpeas. Depending on the brand of Greek yogurt you use and how thick you like yours, you may or may not need to add more olive oil to yours.

It’s a very forgiving recipe. Test what works best for you and even add more herbs and spices too (dried or fresh both work!). One herb I do not recommend omitting is the cilantro. It gives it the best, tangy flavor!

Make sure you use shelled edamame for this recipe. You can find it in the frozen food sections of most stores.

Ingredients 

  • 1/2 cup Greek yogurt
  • 12 ounces edamame, shelled and thawed if frozen
  • 1/4 cup extra virgin olive oil
  • 1/4 cup cilantro
  • 2 sprigs mint, optional
  • Salt to taste

Instructions 

  • Combine all ingredients in a food processor or blender and blend until smooth. Remove and devour!

    I find that if I keep a positive attitude about Mondays, they usually aren’t so bad… (sometimes it is hard to do, but I atleast try!) This looks soooo delicious! I’m a huge edamame and hummus fan!

    So fun and fresh for St. Patrick’s Day, I LOVE the color!
    Makes me miss edamame (soy) but just might have to have a little just because it looks amazing, the girls would love it, and only being home for just over 24 hours next week, on one of my favorite holidays, I MUST make something green as well as some other St. Patrick’s Day favs! Crazy I know but I’m missing having a big dinner party like we usually do and will find a way to fit in some festive fun between unpacking, laundry, and repacking and I have to eat right?!

    I’ve definitely been playing catch up the past couple weekends. I actually find now that I’m home more, little things like dishes and laundry creep into my “work” day and I end up having to do more on the weekend. That hummus looks gorgeous! Fresh herbs just make everything better.
