Monday! I'm glad to see you. This weekend was busy. Although I have no idea what I actually did? Friday night my favorite person visited and got to meet the guy. We had dinner then she left and the guy and I randomly decided to go bowling.
So much fun, but my bowling skills are seriously out of practice. I also finished my last final for school this weekend. which means I'm done with my last two classes. I have just one class left that starts next week then graduate in June. I'm so ready!!!
Today I'm back to my normal routine and that includes walking! I've been crutch free for a few weeks, but taking it very easy. I'm also back to teaching spin class and crossing my fingers all goes well. Being injured last month made me feel less than a real person.
I don't know who I am when I can't workout or well, walk. It sure makes you grateful for the little things you can do when you're injured!

Like eating an insanely delicious Healthy Taco Dip recipe! Growing up, taco dip was one of my favorite recipes but it isn't the most waist friendly combination. So I lightened up the recipe by swapping the cream cheese and sour cream for Greek yogurt.
Just as thick and creamy as the original version, but this one's packed with protein and probiotics from the Greek yogurt. Great for those watching their weight and trying to increase their gut health!
For the seasoning, I used my homemade taco seasoning recipe. Please don't buy the ones at the stores. There's so many weird things in those. To make your own, you really only need a few pantry staples and I guarantee you already have them. If you don't, you should! A skinny kitchen should always have a plethora of seasonings and herbs!
And this Healthy Taco Dip couldn't come at a better time with Cinco de Mayo this weekend! The guy will be gone so I'll be partying all weekend! Actually no, I'll be diving into a final and finishing homework while dipping into this good stuff with veggies and crackers (only 4 more weeks until graduation!!!).
This Healthy Taco Dip is perfect for weekend snacking or a meal in itself. If you feel like sharing, I'm sure your guests will have no idea this is healthy!

Healthy Taco Dip with Greek Yogurt {GF, Low Calorie}
Ingredients
- 1 cup nonfat Greek yogurt I use Fage
- Homemade Taco Seasoning
- 2 roma tomatoes diced with seeds and ribs removed
- 1/2 cup black olives sliced
- 2 cups iceberg lettuce shredded
- 1/2 cup light Mexican 3 cheese blend
- Optional: sliced green onions for garnish
Instructions
- In a small bowl, combine the Greek yogurt with the homemade taco seasoning mixture. Stir until combined well.
- With a spatula, spread the Greek yogurt mixture onto the bottom of a round 9-inch glass dish into an even layer.
- Top with shredded iceberg lettuce, tomatoes, cheese and black olives. Garnish with green onions as desired.

- Each serving is 1/4 cup
