Eating vegetables never came natural to me. When I was a teenager, my mother would tell me "Brussels sprouts tasted like candy." I thought she was nuts. I mean, it's a vegetable. How can you make a vegetable taste good?
Oh, how times have changed.
The funny thing about looking back is realizing how far I've grown with my eating habits. Now Brussels sprouts taste like candy to me, and even my clients are discovering the same. I've had to work hard to love eating vegetables, and I'm sure glad I did because Brussels sprouts are my all time favorite food.
So how do you make Brussels sprouts actually taste good and not like a vegetable? By roasting or sautéing them! But are you ready to take yours to the next level? Here we go friends...
Balsamic Bacon Apple Brussels Sprouts
Balsamic, bacon and apple oh my! Adding them to Brussels sprouts makes for a hearty and nourishing salad. Admittedly, this has been my go to fall salad and it only takes 15 minutes to make in a skillet.
What You Need
- Bacon
- Shredded Brussels Sprouts
- Kale
- Apple
- Balsamic
- Dijon
- Olive Oil
- Salt, Pepper
Helpful Tips
Shredded Brussels sprouts is the best for this salad! You can find them already shredded at Trader Joe's, Whole Foods, or you can shred Brussels sprouts yourself by pulsing them several times in a food processor. It doesn't have to be perfect. In fact, imperfectly shredded makes for the best consistency for this salad!
How To Serve This Salad
The good news is this salad doubles as an appetizer, side dish for lunch or dinner. It would also make a wonderful healthy and low calorie addition to your holiday menu. If serving for lunch or dinner, all you need to do is add a protein. Easy peasy!
I recommend serving this salad warm. For reheating, add to an oven safe dish and warm in the oven at 300 F for 15 minutes or you can always pop in the microwave for 1-2 minutes on high.

Balsamic Bacon Apple Brussels Sprouts
Ingredients
- 4 slices bacon sugar free, turkey or regular
- 10 ounces Brussels sprouts shaved
- 4 cups kale
- 1 red apple cored and diced
- 1 tablespoon extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon dijon mustard
- Salt and pepper to taste
Instructions
- Preheat oven to 350 F. Line a baking sheet with foil. Place the bacon on the foil. Bake 10 minutes flipping once half way through until bacon is cooked. Remove from the oven and set aside.
- Heat a large skillet to medium heat with extra virgin olive oil. Add the shredded brussels sprouts, kale, salt and pepper. Toss to combine. Cook 5-7 minutes.
- As the greens cook, core and slice the apple into slices. Roughly chop the bacon.
- Add the apple and bacon to the skillet and toss with the greens.
- In a bowl, whisk together the dijon and balsamic vineagar then add to the skillet and stir.
- Cook another 8-10 minutes until apples and greens are cooked thoroughly. Remove from the skillet and serve warm.
