Preheat oven to 350 F. Line a baking sheet with foil. Place the bacon on the foil. Bake 10 minutes flipping once half way through until bacon is cooked. Remove from the oven and set aside.
Heat a large skillet to medium heat with extra virgin olive oil. Add the shredded brussels sprouts, kale, salt and pepper. Toss to combine. Cook 5-7 minutes.
As the greens cook, core and slice the apple into slices. Roughly chop the bacon.
Add the apple and bacon to the skillet and toss with the greens.
In a bowl, whisk together the dijon and balsamic vineagar then add to the skillet and stir.
Cook another 8-10 minutes until apples and greens are cooked thoroughly. Remove from the skillet and serve warm.
