Turmeric Cauliflower Broccoli Gratin is a vegetable casserole made with a rich white wine sauce and sprinkled with parmesan cheese. A low carb side perfect for dinner or the holidays!

So I survived my first week alone post surgery and my 39th birthday. Whew! I should probably be posting a celebratory treat today, but instead I’ve got this savory Turmeric Cauliflower Broccoli Gratin. There’s been a lot of goodies around here lately. When I get on a pumpkin role, I just can’t help myself.
Between healthy pumpkin oatmeal cookies, chocolate pumpkin muffins, healthy pumpkin bread, I’m beginning to feel like a personal bakery, only without paying customers.
HA! So…a savory dish was in order and I’m guessing you need something good for Thanksgiving and this Turmeric Cauliflower Broccoli Gratin is really good.
I haven’t gained any weight post surgery. Honestly, I have no idea where I’m putting this stuff but I know it will catch up with me if I don’t tighten up the nutrition. Now that I’m {old -lol} walking more I need to eat better so I can kill it in the gym.
People still can’t believe I had my hip replaced a month ago. They look at me like I’m super human. My theory is the mind-body connection is greater than most people realize.
Okay, enough about me already. We’ve got cauliflower broccoli casserole on deck today.
You know how much I love my easy cauliflower mash for a quick holiday side dish. If you come to my house for a holiday, it’s guaranteed to be on the menu. In fact, I even tricked my Dad into thinking it was potatoes last year. Muahahah!
This year I fancied up that recipe by turning it into a rich, decadent casserole with white wine. It gives the dish a bit of tang and balances the cumin, turmeric and thyme in the background.
The flavors really pop! I know it looks and there are several steps in the directions, but honestly it’s an easy dish. If you can turn on the oven and put vegetables on a baking sheet, then you can make this. No excuses not to eat those veggies. Mmk?
Cauliflower Broccoli Gratin
Ingredients
- 2 heads cauliflower, ~8 cups, chopped
- 3 cups chopped broccoli
- 1/2 cup white onion, diced
- 2 tablespoons garlic, minced
- 1/2 tablespoon extra virgin olive oil
- 1/3 cup white wine
- 1 cup unsweetened almond milk, or milk of choice
- 1/2 cup fresh parsley, chopped
- 1 1/2 teaspoons thyme
- 1/2 teaspoon cumin
- 1/4 teaspoon turmeric
- 2 tablespoons grated parmesan
Instructions
- Preheat oven to 425 F. Prepare a baking sheet with parchment paper then place cauliflower on the baking sheet. Bake in the oven for 25 minutes.
- Heat a skillet over medium heat then add extra virgin olive oil, onions, garlic and white wine. Sauté 3-4 minutes until onions are translucent.
- Add broccoli to the skillet and cook 5 minutes stirring occasionally. Turn off the skillet and wait for cauliflower to finish cooking.
- When cauliflower is done baking, remove from the oven and turn oven down to 375 F. Transfer one quarter of the cauliflower to the skillet.
- Transfer the remaining cauliflower to a blender with almond milk, parmesan cumin, thyme, turmeric, pepper and a large dose of salt. Process until it becomes a creamy consistency.
- Transfer the mashed cauliflower to a 13"x9" baking dish and spread into an even layer. Top the contents of the skillet over the mashed cauliflower then add chopped parsley to the top.
- Bake gratin another 20 minutes, remove from the oven and serve immediately.

- 1 serving is about 3/4 of a cup.
