Spiralized Turkey Burgers with Zucchini & Carrots! These burgers make a bold statement with curly strands of veggies. With 4 ingredients and 10 minutes to make, this veggie packed recipe is one anyone can make. Paleo + Gluten Free + Low Calorie
Working with food as your full time job puts you at risk for either eating a lot or getting a food illness. In my case, it was eColi. One day I woke up, went to the gym, came home, and without warning was in excrutiating pain followed by a bloody mess of urine. It went on all day. I thought I was going to die.
I toyed with the idea of going to the ER but I've been there. It's a scary place. I also thought about calling the guy. I was too embarrassed to tell him about my business down there, which is dumb because he tells me more than I need to know about his. When I finally told him what happened, he was annoyed I didn't tell him. Oops. Girlfriend fail.
Being the stubborn woman I am, I told no one and waited until the next morning to call my PCP. After an emergency visit, a few blood tests, an eColi diagnosis, antibiotics were prescribed and I was pain free immediately.
I never thought I'd be someone who'd get eColi, but like any disease it doesn't discriminate. So all that to say WASH your produce people! You can't see the ugly monsters crawling around on it, but believe me it's there.
Onward to Spiralized Turkey Burgers! I often buy turkey burgers and keep them in the freezer for a quick lunch or dinner. The only problem turkey burgers are a little bland. So I jazzed mine up by spiralizing carrots and zucchini and stuffing the burgers with them. They make the burgers moist and I have to admit I really enjoy getting curly bits of veggies in each bite.
I love, love, love my spiralizer. I use it ALL THE TIME. If you don't have a spiralizer or have a weird thing with textures, you can also grate the veggies and that will work just as well.
These Spiralized Turkey Burgers are big on flavor, have minimal ingredients, take 10 minutes to make and freeze beautifully. Anyone can make them, even you. Perfect for weekly meal prep, a quick lunch or dinner, or for prepping freezer ready meals!
I ate my Spiralized Turkey Burger salad style over a bed of spinach with mustard drizzled over it. Some other ways you could serve it are in a lettuce wrap on gluten free bun, or over zucchini noodles with spaghetti sauce.
