Why I Love The Recipe
Let me introduce you to my new favorite little friend. Pumpkin Protein Cookie Dough! High in protein and lightly sweetened with maple syrup. This is one of my favorite ways to enjoy a chocolatey snack in a healthier way!
No baking required. Just stir, chill and enjoy. This easy recipe is guaranteed to be your new fall favorite dessert.
What You Need
- Pumpkin Puree
- Maple Syrup
- Coconut Flour
- Vanilla Protein Powder
- Cinnamon
- Mini Chocolate Chips
What You Do
Simply mix the ingredients together, chill and enjoy with veggies or fruit!
What To Serve It With
- Sliced Apples
- Grapes
- Celery
- Jicama
- Gluten Free Crackers
- Or by the spoonful!
Pumpkin Protein Cookie Dough
Ingredients
- 1 cup pumpkin puree
- 1 tablespoon maple syrup
- 2 tablespoons coconut flour
- 2 tablespoons vanilla protein powder
- 1/2 teaspoon cinnamon
- 2 tablespoons mini chocolate chips, or dairy free chocolate chips
Instructions
- In a large bowl, add all ingredients. Mix until well combined.
- Chill 20 minutes.
- Serve with apples, fresh fruit, or eat it right out of the jar!

- Keep in the refrigerator up to 2 weeks.

tried this with cocoa powder and was delicious definitely recommend also kid approved!
I bet this would be easy to make into a chocolate pumpkin spread by adding a bit of cocoa powder (am I being an obvious choco-holic??) Canโt wait to try this!! If I try it with some cocoa powder Iโll let you know how that goes too!
