Well, things are back to pseudo normal around here and by that I mean driving Miss Daisy (I'm Miss Daisy) and wearing my pants inside out. While it's nice having Mom around to help, I think she's playing tricks on me.
This must be the four or fifth time I've worth my gym pants inside out at the gym and haven't noticed until I got home. I want to die of embarrassment. I can only imagine what people are thinking. The gimpy girl on crutches is wearing her pants inside out again "poor girl." No wonder I can't pick up a decent guy.
I texted one of my friends who I was talking to the day I wore them inside out. Thankfully she says she never noticed. She told me she once wore her shorts inside out to spin class and no one told her. Now that would be embarrassing especially with the lined underwear sticking out and all. Eek!
Mom told me I must be turning my pants inside out when I put them in the wash, but I never do that. I think because the seam is on the outside of many of my Lulu pants she flips them on accident thinking the seam goes on the inside.
Either that or it's an evil trick she's playing on me which I wouldn't put past her. I'm going with evil trick as I found two shirts inside out this week. She's sneaky! Remind me to tell you about the time she unwrapped all her Christmas presents. I'm onto her.
Speaking of Christmas, I'll be making a lot of cookies this year for Christmas presents and these Pumpkin Peanut Butter Chocolate Chip Cookies are definitely ones to wrap in a bow or you could just make them for yourself. They're soft, creamy and melt-in-your-mouth.
Like all my pumpkin recipes, these gems don't have a pumpkin-y flavor which is a win if you're trying to eat more vegetables or just don't love pumpkin. In fact, these taste like a regular peanut butter cookie with chocolate-y goodness. You'll fool everyone with them! Happy baking!
Pumpkin Peanut Butter Chocolate Chip Cookies
Ingredients
- 1 cup peanut butter unsalted & creamy (for Paleo use cashew or almond butter)
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 2 teaspoons pumpkin pie spice
- 1 teaspoon almond extract
- 1/4 teaspoon sea salt
- 1/4 cup mini chocolate chips
Instructions
- Preheat oven to 350 F. While the oven is heating, place a baking sheet for the cookies in the oven.
- In a standing mixer or large bowl for a hand mixer, add all ingredients except chocolate chips. Mix to combine batter until smooth then add chips and fold into batter by hand.
- Remove the baking sheet from the oven and line with parchment paper. Place 2-3 tablespoons full of batter onto a preheated baking sheet.
- Bake at 350 F for 12-15 minutes until edges are slightly brown.
- Remove from the oven and the allow cookies to cool 5 minutes on baking sheet before removing with a spatula. They will continue cooking for those 5 minutes.
- After 5 minutes, carefully transfer to a wire rack to cool completely.
- If desired, sprinkle tops of the cookies with more pumpkin pie spice and chocolate chips.
- Store in a container in the refrigerator up to one week.

Of course I know peanuts aren't Paleo. I didn't say the recipe was Paleo. I give a Paleo substitute in the instructions with cashew butter. Did you read that?

Ok these turned out delicious but look nothing like yours and didn't stay together at all. They can't be picked up at all, they need to be eaten with a spoon! Any idea what I did wrong. I didn't use real maple syrup because I only had pancake syrup on hand, could that have been the problem? I also added 1tsp of corn starch hoping to make them chewy. Very tasty but a hideous mess!

Fell apart??? I make these all the time and they never fall apart. You cannot sub fake maple syrup for these so that was likely the problem. It just doesn't bind the same. The other thing to look at is the peanut butter you used. Was it thoroughly stirred? if it was too oily, they would never stick together. Corn starch is not needed for these. When properly measured and the right ingredients are used, they will stay together as you see in the video.

Thank you for this recipe! Delicious!!! I'm vegetarian, but like to eat vegan whenever possible. I substituted chips for cocoa & maple syrup for corn syrup & maple syrup flavor because that's what I had in the house. 🙂

Did you add baking soda or powder? or protein powder? It appears from the texture of the top of your cookie. Also, I followed the recipe to the T but mine did not come out looking anything like yours. Please advise.

No baking soda or protein powder. The sprinkles on top are just extra pumpkin pie spice (step #10 in the recipe). I've made 4 batches and they've all turned out. I've also had 3 people post on Instagram that they have made & loved them with their pictures. How did yours turn out and what type of nut butter did you use? Also, are you using pumpkin puree or pumpkin filling?

I used whole foods creamy peanut butter, and pumpkin puree. Not sure why mine are so grainy? All in all, it's just the appearence, but I like the way your look better! 🙂

Grainy is strange. That leads me to believe it has to do with the nut butter. Sometimes the oil sits on top and if they're not stirred extremely well then you get that grainy part at the bottom. Thanks for letting me know! I'll be on a mission to figure this out now. If I do, I'll let you know.

No worries! Thanks for your response! I'm thinking that it may be an ingredient in the sugar free maple syrup, possibly the sugar alcohols may be whats giving your gorgeous cookies that glazed look. Kind of similar to when people bake the quest bars into cookies. Whatever it is, looks amazing!

Holy CRAP, these look so good! Pinning them to make soooon. I luckily have never worn my pants inside out, but I think it's because I do some crazy thing where I wind up getting one leg inside out and one leg right-side-out in my hamper, so before washing them I have to pay close attention just so I can fold them right 😀

Haha...my Mom tried to accuse me of doing that with my pants but I never do that and you will love the cookies! They're hard not to eat all at once!
