Pumpkin Acai Bowl {GF, Low Cal}

Pumpkin this and pumpkin that everywhere. I swear every year pumpkin season starts earlier and earlier. I don't know about you, but I'm not quite ready for pumpkin season. Something about 100 degrees and pumpkin doesn't mix well. Let me just sweat over here as I down a PSL. No thank you.

What I can get down with is a cool Pumpkin Acai Bowl! A fall seasoned treat that gives will give you your pumpkin fix without making you sweat. It's been my go to treat these last weeks as I envy everyone else in cooler weather.

Okay, so I know this combo sounds strange, but trust me it's delicious. Much more delicious and balanced than other smoothie bowls and here's why.

  • Acai - High in antioxidants and protein. Bet you didn't know that! Also, adds a unique, sweet flavor.
  • Greek yogurt - adds a creamy texture and protein {sub coconut yogurt for a Paleo or dairy-free version}.
  • Pumpkin - High in fiber, potassium and Vitamin C. 

One of the reasons I love pumpkin season is because it's so good for you and you can sneak it into so many things. Protein balls, cookies, brownies, pancakes, muffins, donuts and acai smoothie bowls! It's such a versatile ingredient that's lower in carbs. It's high in fiber so the blood sugar effect is slower than eating a bag of candy.

Ingredients
 
 

  • 1 frozen acai pack
  • 1/2 cup unsweetened almond milk or milk of choice
  • 1/2 cup Greek yogurt plain, nonfat
  • 1/3 cup pumpkin puree
  • 1/4 teaspoon cinnamon + more for sprinkling
  • Optional toppings: pumpkin seeds, berries

Instructions
 

  • To a blender or food processor, add all ingredients. Blend until smooth, pour in a bowl, add optional toppings as desired and enjoy!

    I still haven't tried acai bowls, that really needs to change. I need to put that on my mental Whole Foods grocery list. I'm on the struggle bus today after getting up at 4 am to go train for my new job at a gym. I could really use one of these right now.     I have not had an acai bowl. There is such a lack of healthy options in Memphis. If I do ever find acai I will definitiely give this a try. Thanks for sharing

    I'm totally obsessed with acai bowls. I usually have one at least twice a week. The Sambazon packets are the best! So glad you enjoy them as much as I do... definitely going to have to try adding some pumpkin! Love the twist 🙂
